Clear Vegetable Soup
1 teaspoon minced chilli
1 teaspoon minced garlic
1/2 cup finely chopped dill
3 vegetable stock cubes
1 finely chopped onion
1 cup finely sliced carrot
1 cup finely sliced celery
1 cup chopped broccoli
1/4 cup lentils
1/4 cup barley
Saute the chilli, garlic, dill, stock cubes and onion
in a little water.
Add water, carrot, celery, broccoli and simmer until
vegetables are almost soft.
Title: HOT AND SOUR SOUP
Yield: 1 servings
3/4 c Sweet and sour sauce
2 c Water
1 T Vinegar
1 T Brown sugar
1 Egg (optional)
1 t Hot sauce
2 T Barbecue sauce as the
Original recipe called for
Sliced barbecue pork
1 Cake tofu cut in 1/2" cubes
x Watercrest and bamboo shoots
Sliced
1 Tomato sliced and diced
1/4 c Mushrooms sliced
1/4 c Red and green pepper sliced
2 Spring onions chopped
1 1/2 t Corn starch (approx)
In a sauce pan add sweet and sour sauce, water and egg and beat. Apply
heat and add all other ingredients. As soup nears a boil add sufficient
corn starch mixture to thicken. Continue to apply heat until soup thicken.
Do not over cook as it is best when the vegetables are still crispy.

I'm not sure as to how to make veg hot and sour soup....but it it very easy to make clear broth, for a beef broth the best meat to use is center cut shank...3 to 4 pieces, fill large pot 3/4 full of cold water add shank and bring to a boil,turn down stove heat to just maintain a slow boil. I generally start my soups just before noon for an evening meal...let soup boil for at least 4 hours....to this add 10 peppercorns and 1tsp salt...after 2 hours add 2 onions cut into fourths, and 6 large crushed garlic cloves...continue to slow boil. An hour before eating add 2 chopped carrots, a cup of chopped celery, and 1/2 cup chopped parsley,also other veggies can be added such as shelled peas,green beans,Brussels sprouts cut in 1/2,broccoli....I serve over rice or egg noodles.....same recipe for chicken broth using 4 pieces of chicken with the skin removed

Obvisously, if you add something to water, it's not going to be totally clear. You can however take a chicken flavored bouillon cube and add it to boiling water. Most brands contain some parsley, citric acid, onion powder, soybean oil, whey (from milk). It's still pretty clear when complete.
