For the full mantle, the brown color covers the entire back, whereas the splash will have white markings on the back.

On this page http://saintbernardclub.org/new2saints.htm the dog on top is full mantle, the one below is splash.

Just a description of a color pattern. The white markings on the neck/chest area.

It has something to do with the colour of the coat. St. B's can be rough coated or smooth coated.
