Need new and creative uses for basil - simply have too much and don't want to let it go to waste

Nancy's Favorite Pasta



Penne pasta for two, cooked and drained.

Parmesan cheese

1/4 cup finely minced fresh basil

Garlic salt and black pepper to taste

Olive oil



Easy and quick!

Mince the herbs while the pasta's cooking

and you are halfway there!



Cook pasta, arrange on a plate and

top with Parmesan cheese, your choice of basil,

(Lemon is a favorite, but Purple Opal and Italian

combined together is very appealing to the

palate, as well as the eye).



Sprinkle on garlic salt and black pepper and

drizzle with olive oil (Spanish oil is wonderful).

Lemon Basil Herbed Rice



2 tablespoons of butter

3 tablespoons finely chopped onions

1 cup uncooked rice

1/4 cup chopped lemon basil

1 small bay leaf

1 tablespoon chopped parsley

Several drops of Tabasco sauce

2 1/2 cups chicken stock

Salt and white pepper to taste.

Serves 6-8



Preheat oven to 400 degrees.

Melt the butter in and oven proof saucepan. Add the onion and cook until it is softened.

Add the rice and cook, stirring over medium heat for 3 minutes.

Add lemon basil, the bay leaf, parsley, Tabasco and stock.

Bring to a boil, cover tightly and transfer to the oven.

Bake 25-30 minutes or until rice is tender. Add salt and white pepper to taste.

With a fork, fluff rice and serve. Enjoy!

well you can always clean it and then freeze it.
I love Basil. I am growing it myself.
You can put it in Sauces (red sauce)
you can put it on sandwiches
you can make a tomato and basil salad
you can put loads of it in a regular lettuce salad
you can put it in soups
you can put it on pizza
you can make mozzarella and basil with olive oil

Ohh There are sooo many Ways you can Use Basil.

You can also go onto the computer and type in say google Basil Recipes

Use it in gravies (meaning tomato sauce for you non-Italians) for pastas or pizzas. Chop it up and use as a garnish on virtually any tomato based dish. Make caprese salad which is really simple: fresh sliced tomatoes, fresh sliced mozzerella cheese and fresh basil drizzled in olive oil. It's a delicious and quick appetizer. Serve it with Italian bread if you like. Use it to make fresh salsa. Basil pairs nicely with tomatoes if you haven't figured that out by now. Worst comes to worse, give it away to friends and neighbors. Our neigborhood is always sharing fresh herbs and veggies from our gardens. Often, we all get together to enjoy our creations and learn new recipe ideas from each other.

You can use basil when making tomato sauce.

Basil leaves are great to add to tomato and mozzarella salad.

And a bunch of Basil leaves in some water is like an air freshener for your kitchen.

Basil is great stuffed in baked salmon or under the skin in baked chicken. You can also slice tomatoes about 1/4 inch and drizzle with oil, salt, pepper, sugar and top with fresh basil and bake. Or make basil infused oil or add fresh to salads or sandwiches. Or, dry the basil and use it in sauces.

I agree with "oldlady" Dry it out and store it. I have a dehydrater but is just as simple to put in my oven for short time and it tends to keep it's color a little better. Store it in air-tight containers. I use basil in most of my Italian dishes and also love it on salads or just sliced cucumbers and tomato. And yes, homegrown fresh herbs tend to make wonderful Christmas gifts.

Basil is an excellent spice to use in all kinds of cooking. You can use it anytime you would use oregano and other spices like that.

I like to marinate prawns in a little olive oil and basil and then cook them on the barbeque.

You could freeze some of it and use it later. We've had success with that.

These aren't that new and creative, but...

-add to salads & all of your pasta dishes
-Make bruschetta (could be spelled wrong)
-make an olivey-basily-cheesey tapenade

Also, you could go to
allrecipes.com and type in basil as your main ingredient.
