I want something really simple and plain, like rice and meat...how do I do the juice/gravy? flour & water in the grease??? What kind of seasonings???

My mom used to make something like this and it had a sort of brown gravy...can't get ahold of her at this moment though...

It sounds like you are trying for a brown gravy.
Try this:
Cook the rice and set aside
Brown the hamburger and drain the grease. Set aside.
In the skillet add:
1 cup canned beef broth (or 1 cup of water and 2 beef bullion cubes)
2TBS conrnstarch (whisk in until smooth)
1 tsp salt
1 tsp pepper
Rosemary, Sage and Thyme
simmer until slightly thickened.
Add rice and beef back into the skillet along with chopped tomato if desired.
If you want a creamy version, add 1 cup of sour cream after you've removed the skillet from the stove - mix well

I don't know of a gravy recipe but here's a good hamburger and rice meal my husband loves it. They're called Porcupines.

PORCUPINES

INGREDIENTS:
1 1/2 pound lean ground beef
2/3 cup long-grain rice, uncooked
1/2 cup water
1/4 cup finely chopped onion
1 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 large can (15 ounces) tomato sauce
1 cup water
2 teaspoons Worcestershire sauce
PREPARATION:
Directions for porcupine meatballs
Mix ground beef with rice, 1/2 cup of water, chopped onion, seasoned salt, garlic powder, and pepper. Shape porcupine ground beef mixture by tablespoon into 1 1/2-inch balls.
Place the porcupine meatballs in an ungreased 2-quart shallow baking dish. Mix the remaining ingredients and pour over the porcupine meatballs. Cover and bake at 350° F. oven for about 45 minutes. Uncover and bake porcupine meatballs 15 to 20 minutes longer.
Porcupine meatballs serve 4 to 6. Enjoy!!

use soup instead of gravy. Fry your meat and make your rice and mix the two together. then add a can or two, depending on how much you make, of cream of anything soup. You can add mushrooms and onion for flavor, and maybe add some broccoli, put it all in a baking dish and bake until hot, then throw some cheese on top and put it back in to melt, and then you have a casserole.
I am good at throwing things together - use your imagination, sometimes those are the best meals.

I know it's not exactly the recipe you're looking for, but try this:

In 2 Tbsp olive oil simmer 1/2 med chopped onion till clear and tender. Add in and brown a pound of ground chuck or round. Stir in 1 can cream of mushroom soup, 1 cup milk, 1 1/2 cups water, salt and pepper to taste. Add other herbs and spices like marjoram, parsley flakes, rosemary, bay leaves, garlic, savory, etc to suit your taste. Bring to simmer. Stir in 1 1/2 cups instant brown rice. Cover and let sit about 5-10 minutes.

definately don't use the grease. you're supposed to drain that stuff from the hamburger after it's browned. you can go and buy instant gravy in packages where you add milk and water, or you can buy premade canned gravy.
whenever i brown hamburger i always add pepper, oregano, basil, garlic and onion salt- but in moderate portions.
or u can make stuffed peppers. um, or brown the hamburger,add seasonings and drain, cook the rice, mix together, then mix in cream of celery soup, cream of mushroom soup, u can add actual mushrooms too if you want, and any other veggies u like, green beens, and put it in a casserole dish and throw it in the oven for half hr or so...

If you want gravy for hamburger, dump the hamburger grease, then melt butter in the pan you cooked the hamburger in (or you may use oil, if you prefer). Stir in the same amount of flour as your butter and stir until smooth. Let it brown a little then slowly add milk, stirring all the while. Cook on med-low heat and stir until thickened. Salt and pepper to taste. Voila'... creamy milk gravy, just the way grandma made it.

I don't have precise measurements but a good rule of thumb is one tbsp. fat and one tbsp. flour to one cup of liquid. Adjust fat and flour mixture amounts for thicker or thinner gravy.

If you are akin to a different flavor, try: SPANISH RICE
Saute:
1 small diced green pepper
1 small; diced red tomato (Roma)
1/2 c. diced yellow onion
In 2T. olive oil
~~~~~~~~~~~~~~~~~~~~
Add: 3/4 c. long grained rice
Saute 2-3 minutes more
Add: 1 can chicken broth
1/2 t. chili powder
1/4 t. dry cilantro
Bring to boil...Cover and cook in microwavable bowl w/cover, at .5 power for 20 minutes or until rice is tender...

A great side dish for any Mexican meal...

One of my favorite things to make is with Rice and Hamburger meat. I add a can of Rotel (which is basically salsa), to the cooked hamburger meat, and the cooked rice. Simmer it all together until it's all absorbed the spice. It's soooooo yummy! And healthy, too!! (if you use lean hamburger, & wild rice)

I make something like that only i put stewed tomatoes and a little celery and season to taste it is like goulash only with rice instead of macaroni it is quick and my whole family likes it even the kids

My wife makes something she calls "porcupine meatballs".
Make meatballs with some rice mixed in. Season to tase. We like garlic salt.
Pressure cook. Drain the grease.
Serve with cooked veggies and garlic bread.
