Judd Family Meatloaf
2 1/3 cups coarsely crushed soda crackers (1 1/2 tubes from package)
2 pounds lean ground beef
1/2 pound breakfast sausage patties
1 large egg
2 medium onions, chopped
1 medium green bell pepper, minced
3/4 cup ketchup plus 1/4 cup for the top
1/3 cup Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
This is one of Naomi's favorite family recipes published in her book, "Naomi's Home Companion." First, take any rings off your fingers and send them to me! Preheat the oven to 325ø F. In a heavy-duty, plastic food-storage bag, place the crackers, seal, and roll over with a rolling pin until crushed but not powdery. In a large bowl, with clean hands, mix together all the ingredients except the 1/4-cup ketchup for the top. Mix thoroughly but lightly, being careful not to pack the meat too much. Place in a 13 x 9 x 2 inch baking pan and shape into a loaf. Cover with aluminum foil. Bake for 45 minutes. Remove the foil. Spread the top of the loaf with the 1/4-cup ketchup. Hope it turns out well!! ENJOY!!! Ingredients: 1 lb Chop Meat 1 to 2 Eggs Salt & Pepper 1 Onion Bread Crumbs - You Choose The Flavor !! Garlic Powder Oregano 1 Can Of Brown Gravy Optional 3 to 4 Potatoes Method: Pre-Heat Oven To Bake At 350 Mix Meat, Chopped Onions, S & P, Oregano, Garlic Powder, Eggs, & Bread Crumbs. Shape Into Loaf & Put Into A Casserloe Dish With A Touch Of Oil On The Bottom. Slice Potatoes (Leave Skin On) & Place Around Loaf In The Dish. Now Bake At 350 For About 45Min. *After The First 15Min Pour Brown Gravy Over Meat.* Note: You Can Add 1 To 2 Slices Of Moist Bread To Mix If You Want To In Addition To The Bread Crumbs.

Dad's Meatloaf with Tomato Relish Recipe courtesy Tyler Florence
Recipe Summary

Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
11/2 pounds ground beef
1 pound ground pork
3 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices
Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

Grandma's Meatloaf Recipe #94509
Received this recipe from a former co-worker several years ago. This has turned out to be my husband's favorite meatloaf...very moist and tangy! This is also a way to sneak more veggies into your children's diet!
2-2 1/2 lbs hamburger (I usually purchase 80% lean)
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1 medium onion, minced
1 carrot, grated fine
1 green pepper, minced (optional)
2 slices bread, toasted in your toaster and cubed
1/2 cup milk
Sauce
1 1/2 tablespoons sugar
1 1/2 tablespoons vinegar
1 small onion, minced
1 tablespoon butter
1 1/2 tablespoons Worcestershire sauce
1/2 cup catsup
1/4 cup water
6-8 servings Change size or US/metric
Change to: servings US Metric
1 hour 15 minutes 15 mins prep
# Preheat oven to 375 degrees.
# After toasting and cubing your bread, soak it in the milk.
# Mix remainder of meatloaf ingredients together well.
# Add toast cubes/milk and mix lightly.
# Place meatloaf into a loaf pan and bake for about 1 hour or until a meat thermometer inserted reads 160 degrees.
# Prepare the sauce by combining all the sauce ingredients in a small saucepan and simmer while meatloaf is cooking.
# When meatloaf is thoroughly cooked, remove any extra fat that has accumulated in the loaf pan and slice into serving size pieces.
# Pour sauce over and let stand for about 10 minutes.
# Make sure to get the sauce in between the slices.
Serve and enjoy!

1. Combine ground beef, sausage, craker crumbs, onions, garlic and celery, then add egg, milk, catsup, salt and pepper.
2. Mix together well and press into 1 1/2 quart baking dish.
3. Bake 1 hour in a preheated 350 degree oven, then pour tomato sauce over top and bake 15 minutes longer.

Whichever recipe you choose here is a good hint.....I bake my meatloaf in muffin tins. Especially a good idea for small children. Individual servings and best of all......it only takes 20 to 30 min to cook.

stock 15 ml

fat 10 gms
method:
#1.clean and mince meat.
#2.heat fat.fry chopped onions and chopped bacon.
#3.add minced meat,bread crumbs,beaten egg ans seasoning and a little stock to moisten.
#4.grese a bread loaf tin.dredge with bread crumbs.
#5.arrange sliced hard boiled egg.press in prepared meat.
#6.cover with grease- proof paper and bake in a moderate oven at 175 *c(375*f) for 1 hour.
#7.serve hot or cold with tomato sauce or brown gravy.

Really simple
1/2 lb ground pork
1/2 lb ground beef
a handfull of bread crumb (or ritz cracker crumbs)
1 egg
1 small onion chopped
mix well, adding catchup (or bbq sauce) untill mixture is into a nice ball that stay's together
OPTIONAL- add 1 tbl spoon of tabasco (or your favorite hot sauce)
COOK TILL DONE !!!

hamburger,green peppers,onions,egg,bbq sauce,italian seasoned bread crumbs,lipton beef flavored soup mix,salt,pepper,garlic powder.mix well n put in a pan n spread it out.then add more bbq sauce on top.then put slices of bacon on top.bake uncovered at 350 degrees for 1hr15minutes or until its done.serve with baked potatoes n corn...hope u enjoy it
