My Great Grandpa used to sit on his front porch and "widdle".... he had a pocket knife and a "widdlin' stick".... and would just shave it down real smooth. so if you mean what is someone actually DOING when they "widdle" -- they're shaving a stick with a pocket knife...like the old men used to do between checker games...

A minority of people in the UK have been known to use it for 'to pee' - 'to urinate' or whatever you want to call it!
"Going for a widdle" is - arguably - a more polite way of saying "going for a p!ss / slash" without resorting to nonsensical tripe like "going to see a man about a dog ..."

It's spelled "to whittle" and it means to carve wood by shaving off small bits with a knife. By extension, "to whittle away" means to gradually make smaller, by slowly removing small amounts.
