Hello!!

Does anyone know how to make potato scallops/cakes. i lived in Australia for a couple of years and now i live back in the UK, i miss them, i'd usually have 6 at a time. i've looked on the internet and they reckon slices of potato covered in batter, but they were never crunchy or hard, the potato was soft

How do you make them?

I forgot to say... I mean them with batter on, they are only thin but largish circular, was a nice batter, not inches thick or anything with soft potato in (the best ones were in tasmania with the other nice ones in cairns central)

Potato Cakes Recipe

New potatoes, cooked, peeled, mashed 2 cups
Egg 1
Flour 1 tablespoon
Whole milk 2 tablespoons
Vegetable oil 1/4 cup



PREPARATION TIME: 10 MINUTES
COOKING TIME: 5 MINUTES


1. Mix mashed potatoes, egg, flour, and milk thoroughly.

2. Shape into flat cakes, about 1/2 inch thick.

3. Heat oil in skillet.

4. Add potato cakes to hot skillet. Cook until golden brown and thoroughly heated.

PER SERVING:
Calories 210
Total fat 15 grams
Saturated fat 3 grams
Cholesterol 54 milligrams
Sodium 222 milligrams

Potato Patties .
2 medium russet potatoes
1 egg
3 tablespoons butter
1/4 teaspoon salt
2-3 servings

1. Pare and quarter potatoes.
2. Boil til very tender.
3. Drain and mash well (food processor makes this easy).
4. Beat in egg and salt.
5. A little flour may be added if the mixture is too thin.
6. Melt butter in skillet on medium heat.
7. Spoon potatoes into pan and saute til brown and slightly crusty.
8. Turn carefully and brown on the other side.
9. Serve hot.

Kernow Lady, the item known as a scallop is a slice of potato that is battered and then fried. I am not in London, but know of several fish and chip shops in Lincoln that sell them.

to ensure the potatoes are soft drop them in boiling water for a few minutes and then cool before dipping in the batter...

ensure the oil or fat is moderately hot to ensure the batter becomes crispy..

like most, i used to use potatoes and scallops to make them. but now i use chocolate chips and cookie dough,mmmmm much better
