Perfect Soft Boiled Eggs
When I want a soft boiled egg I want the yolk soft and the white firm. The boiling time has a lot to do with your elevation. 5 minutes is perfect for an elevation of 1100 ft (330 meters) if you are nearer sea level decrease the boiling time if at a higher elevation increase the time. I was surprised that there wasn't a recipe for soft boiled eggs posted (just one with saltine crackers) So simple as it may be I am sure there are many that struggle for the perfect boiled egg. Invest in an egg pricker, a little tool that will prick a small hole in the bottom of the egg allowing the air to escape, preventing the egg from cracking as it boils
4 large eggs
1 teaspoon salt
6 cups water
2 servings
1. Bring the water to a rapid boil.
2. add saltand keep it at a rapid boil.
3. Prick the bottom (wider end) of the egg with an egg pricker
4. Immerse in the boiling water and boil for exactly 5 minutes.
5. Dash in cold water, crack & enjoy.

Put the eggs into a pan of water and bring to the boil. Time your eggs as soon as the water boils. Three minutes for runny eggs, four minutes...still runny but just slightly more cooked and five or six for hard boiled. as soon as the egg have done the time you want, empty the boiling water out and cover the eggs with cold water., this will stop them cooking.

It sounds like you want a poached egg
here is Emeril's instructions for poaching eggs
"In a shallow saucepan or skillet bring 2 inches cold water and vinegar to a boil over medium heat. Reduce heat until water simmers gently. Break eggs, one at a time, into a ramekin or coffee cup; holding ramekin as close as possible to water, gently slip egg into water. Poach eggs 3 minutes for very soft-cooked, 5 minutes for medium-soft."
but just in case ....
"PERFECT HARD BOILED EGGS
from Prime Time Emeril Cookbook
Ingredients needed:
* 6 large eggs
Put the eggs in a saucepan that can accommodate them in one layer. Add enough cold water to cover by 1/2 inch and bring to a boil over high heat. Reduce the heat to a gentle boil and cook for 10 minutes.
Drain the eggs in a colander and rinse under cold running water until cool enough to handle. Peel the eggs while still warm.
Yield: 6 hard boiled eggs "

There are too many variables.. the type of egg, the size and the temp that your water is etc. I have this little egg timer that you put in the water and it changes color according to the water temp. it lets you know when the egg is soft, medium and hard and it only cost a couple dollars at linen & things...it is called the egg-perfect timer and is in the shape of an egg... it works great!

I reckon it's better to poach them. It's a boiled egg without the shell.
