I agree with Fion M's answer above, the Mojito is the most refreshing cocktail in the world! But instead of using light rum, I'd use golden rum - preferably Havana Club.
You say you like Baileys... well if you also like coffee, try the Irish Espresso'tini (1¼ shots Vokda - I prefer using vanilla Vodka for this cocktail, 2 shots of Bailey's, and 1¼ shots of cold espresso coffee. Simply shake everything with ice and strain into a chilled Martini glass).
When writing cocktail menus and looking for inspiration, I always turn to http://www.bolscocktails.com - but don't let it bother you that all the cocktails there use a spirit or liqueur from the Bols range, there's always a substitute.

Strawberry daquari! Simply delicious. You can get loads of cocktail recipes off the internet - just type in cocktails and wait for the millions of sites. There is also a Baileys site which give you loads of ideas for cocktails containing the delicious stuff. Ohh, you've made me want one now and it's only 10.45am!

"Purple Rain" is the best for me.
1/2 shot grenadine
1/2 shot peach schnapps (Archers)
1/2 shot white rum
3 count lemonade
3 count sweet & sour mix
1/2 shot blue curacao
Fill a collins glass 3/4 full with ice. Add grenadine and peach schapps and white rum into glass. Then fill with sweet and sour and lemonade. Drizzle around the edge of the glass with Blue curacao to give the drink it's moody dark purple look.

Try it its great:
NOBLE SUNSET
1 oz Casa Noble Crystal
1 oz Amaretto
1 oz Orange Juice
Grenadine
Pour ingredients except grenadine into iced mixing glass, Shake and strain into cocktail glass, chilled. Pour grenadine slowly to make a layer.

Anything with coconut reminds me of tropical holidays, warm surf cascading over my firm bronzed body as i sip on some exotic mix in the Archipelago de Las Pearlas or the San Blas islands. Margaritas and mojitos are my favorites, yet I have a uniqueness cocktail that I make at my bar it somewhat is quite yummy in case you want "desolate tract" beverages: In a rocks glass: 3-4 count number of raspberry vodka 2-3 count number of baileys splash frangelico spash nocello splash creme de cacao or chocolate liquor fill with cream (about one million oz)

mmmm MOJITO!
try it!
Ingredients:
2-3 oz Light rum
Juice of 1 Lime (1 oz)
2 tsp Sugar
2-4 Mint sprigs
Soda water
Mixing instructions:
Lightly muddle the mint and sugar with a splash of soda water in a mixing glass until the sugar dissolve and you smell the mint. Squeeze the lime into the glass, add rum and shake with ice. Strain over cracked ice in a highball glass. Top with soda water, garnish with mint sprig and serve.

OK a shot glass 3/4 sambucca and top with baileys its a Deep throat .
Black sambucca and baileys its a mini Guinness.
(Maybe not the type of cocktail you are looking but trust me they are very nice)
