The 3.0 liter is definitely the best engine choice. As far as comparing an RT and an SXT, the difference is basically the optional equipment on the particular vehicle. Quite often, the SXT has option packages that are less expensive than on other models.

the 3.0 liter v6 is a better choice because if you want to put some 'goodies" in the engine there are hundreds of manufactures that make parts for It. I have a 2002 dodge stratus 2 door coupe sxt it has the 2.4 liter 4 cylinder with a 5 speed manual and performance parts are impossible to find for it. By the way try to find a stratus sxt with a stick.

The 3.0L V-6 is definitely better. The SXT Coupe is better, because it has the HEMI Engine in it. You will lose some gas milleage, but not much. The power you gain with the HEMI, in the SXT, will more than satisfy you.

The 3.0 liter, the 2.7 liter is prone to problems. I have an Intrepid that I still like, but the engine went south at 47,000 miles and had to be replaced. It could have been the fault of the previous owner not changing the oil regularly, but a lot more owners and even the service adviser of the shop that replaced mine verified that the engines are prone to failure. I change my oil every 2000 miles as a result.
