I found a bottle in my cubborad, so it must of been opened sometime w/in the last month. I didn't have any when it first opened. I just want to make sure I'm not going to get myself sick.

chardonnay is a white wine and they can go bad if opened and not refridgerated. if it smells a bit like vinegar i wouldn't drink it.

for the future if you open white wine re-cork it and put it in your fridge. if red re-cork it and lay it so the wine can touch the cork (keep the cork from drying out and air getting to the wine...its all about air)

First - if it was in your cupboard, chill it before you drink it. Warm Chardonnay tastes disgusting.
Second - when it was put in the cupboard was it closed with the original cork or a wine stopper or something other than plastic wrap around the neck of the bottle? If the cork or a wine stopper was used, there's a fighting chance it might be okay after you chill it.

What I suggest is chill the bottle for a few hours and then open it up and pour a little bit into a glass. You will be able to tell from smelling it whether or not it has gone bad - it will smell like vinegar if it has. Hope that helps and hope the wine is still drinkable.

You won't make yourself sick (unless somethingelse has entered the wine). If the wine tastes OK to you, then drink it if you wish. But it will not be as good as it should be. All wine starts to change after opening and quickly deteriorates.

You can buy a new good bottle of Chardonnay fairly cheaply -- why bother with a stale old opened wine?

I will drink a bottle of Chardonnay months after it has been opened if it is kept refrigerated. I like to let wine "breath" a little

then again some people call me an alcoholic ;)

NOOOOOOO!!!!!!!!!!! Don't drink it! After you open it you should keep it in the fridge. Even there it will go bad after a couple months. If you like to just have a glass every now and then but don't want to keep wasting the leftovers try wine in a box. I know that sounds cheesy, but some of it really isn't that bad. It keeps the wine in an air tight bag inside the box. That stuff will keep in the fridge forever.

All wines start to vinegarise once open. Some call it decanting, air-ing, opening the palette. Whatever you call it. Especially the older vintage of reds, some even require up to 10 hours of decanting.

But,when you said you "found" a bottle of wine in your cupboard and remember opening it a "while" ago, it's probably a goner. I won't even use it for cooking. Your food probably taste better without it.

Have fun feeding your pets with it and see how they struggle before death if you like. :)

If you don't know when the bottle was opened then it is most likely not drinkable, but it could be still use able for cooking smell it it doesn't smell like vinegar then its use-able... marinate your chicken in it, or use it to flavor you pasta water about a cup per pound of pasta added to the pasta water. also you can use it to de-glaze your fry pan after frying meat for stir fry or any thing you make with a sauce but you'll need to add a pinch of sugar to help take the vinegar taste out of the sauce.
