From this the days mentioned in Genesis 1 could last much longer than one twenty four hour period or there may have been time in between the days. I believe that the seven days are literal in that God created the world in seven consecutive twenty four hour periods of time. Given that he is all powerfull and beyond time, He can do things that should take a much longer time in a short period of time.

Please. Creationists use faith/believing for their justification about the time table in the beginning.
Telling them that God created the heavens and the earth instantaneously will not make them believe something else.
Telling them that the word create is used only three time will not change their beliefs.
Telling them that the scientific method does not support their belief will not alter their position.
So why do you think quoting 2 Peter 3:8 would change anything.

God exists outside of time, and so to Him a day is like a thousand years or athousand years like a single day. However this cannot be applied to the Creation story in Genesis because the word used for day in the Hebrew is yom, which is one period of time from the setting of the sun to the setting of the sun.
