I'm taking a cruise to Belize, Costa Maya, Grand Caymen, and Cozumel on Carnival.. is it possible to get my passport stamped at say a local post office or something??

Any time you go through customs, that is when they would look at your passport. So, it kind of depends when/where you will be going and also if you are a U.S. citizen. For exampel, if you only go through customs when returning to the U.S. they won't stamp your passport if you are U.S. citizen.

You can ask around, I believe the staff will be able to help you onboard. Ask them where you can get your passport stamped. Any place that would require you to have a passport to travel there, if you are from another country, etc. should have a location to get the passport stamped. You can then ask them to stamp your passport, if you like.

I've been to Belize, Costa Maya and Cozumel, and I didn't even have to show my passport there. We were on a Royal Caribbean cruise.

I just took a cruise to Bermuda and they didnt stamp my passport. I guess every place is different
