"This is a fast and easy recipe for the classic broccoli and bacon salad."

INGREDIENTS:
1/4 cup bacon bits
1 head fresh broccoli florets
1 cup shredded Cheddar cheese
1/2 cup raisins
1/2 cup hulled sunflower seeds
1 red onion, chopped
1 cup creamy salad dressing, e.g. Miracle Whip ™
1/4 cup white sugar

DIRECTIONS:
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
In a large bowl, mix together the bacon, broccoli, cheese, raisins, onion and sunflower seeds.
In a small bowl, whisk together the creamy salad dressing and sugar. Pour over broccoli mixture and toss well to coat. Cover and refrigerate until chilled.

Two of my favorites:
Cracker Salad
1 stack of saltine crackers, crushed up
shredded cheddar cheese, about 1 cup
1 tomato diced,
3 green onions, diced
1/2 c. mayo
salt & pepper
Mix all together just before serving.

Mandarin Salad

1 envelope Good Seasonings Italian, mix as directed
1 can mandarin oranges, drained
sliced red onion
romaine lettuce, cut up
slivered almonds, about 1/4 c.
Mix & toss. Let stand a few hours before serving.

And an idea for tuna salad - mix in lime juice and cut up cilantro, a little mayo, a can of tuna. Great "tropical" tasting tuna salad sandwich

Insalata Caprese

sliced roma tomatoes
sliced FRESH mozzarella
chopped fresh basil
good first cold pressed olive oil
balsamic vinegar (optional)

arrange the tomatoes and cheese on a plate, sprinkle the basil over top. drizzle some olive oil and balsamic over everything.


Pasta Salad

I box of Barilla tri-color fiori (wagon wheels)
red bell pepper
celery
carrotts
grape tomatoes
any other veggies that make you happy
Good Seasons garlic and herb salad dressing

cook the pasta,
make the dressing according to package directions,
chop the vegetables,
drain the pasta,
rinse in cold water
shake off excess water
combine pasta, chopped veggies, and dressing

There's tons of salads, but for a DIFFERENT salad, just do a fruit salad and toss it with ... ready? Poppy Seed Dressing. I serve it at bbq's all the time. PEOPLE LOVE IT!!!! Poppy Seed Dressing is very sweet, but also a little tangy. It's very good. I must be hungry right now cause it sounds good and I just thought typing this that... bacon bits (real bacon bits) would be good scattered on it.

A friend of mine makes very creative green salads. One of my favorite things that she did was put pasta into the green salad. I thought it was unusual when I saw it but it was delicious! Just get some vegetables that you don't usually have and throw them in!

Another salad that's really easy is tomato, feta cheese, and basil, dressed with olive oil.

Feta-cheese over diced water-melon. mmmmm. Sounds weird but it's genius.

Also, ditch the lettuce for leafey things. Put oil and lemon juice on your salad, and throw in some toasted almonds and pomegranate for a new yummy and healthy kick.

go to the supermarket and find the things you like an put them in a salad. Really simple =0P

asparagus
spanish onion
olives
tomato
cucumber
mushrooms
snow peas

nice dressing is oil, balasmic vinegar, honey and seeded mustard.

Baby spinach, mandarine oranges and red onion with a raspberry vinagrette dressing

or

Any combination of chopped fresh fruit (I like it served over plain yogurt)

or

Fresh mozzarella cheese (the kind packed in water) chopped into small chunks, basil finely chopped, and tomato chopped. Mix all together and dress with an olive oil, balsamic vinegar combo. Season with salt and lots of pepper.

or

Broccolli florets, cut up bacon, red onion, shredded cheddar cheese, diced apples, and raisins in a dressing of mayo, a bit of sugar and some red vinegar. Mix it all together and let sit in fridge overnight.

or

Lettuce (I prefer green leaf and butter), crumbled gorgonzola cheese, chopped pears (canned is fine if you don't have fresh), and maybe some toasted pecans thrown in. Dressed with Italian or oil/vinegar.

All very yummy and super easy!

I have a GREAT RECIPIE for a RAW SPINNACH SALAD that everyone who's ever had it goes NUTS over, and they HAVE to have the recipie for it . . . It involves fresh (not frozen), raw chopped spinnach (buy it BAGGED is the best), hard boiled eggs, green onions, Best Foods Mayonaise, lots of black pepper, some salt, and just a splash of milk. If this sounds good, write me back, and I'll give you the whole, detailed recipie and instructions.

My new favorite goes like this -

Baby Spinach leaves (I remove the stems)
Dried Cranberries
Slivered Almonds (spread on plate, sprinkle w/ tsp of Sugar and microwave for 2 minutes)
Thinly sliced apples (Fuji's are the best)

Brianna's Poppyseed Dressing

I just eyeball how much of each to put in, stir the dressing over it and let it sit for 30 minutes before serving.
