My favorite...
SPANISH RICE:
6 slices bacon; cooked, crumbled
1 1/2 lb. ground beef
1 medium onion, chopped
1 small green pepper, chopped (optional)
1/8 teaspoon garlic powder or 1 clove garlic, minced
4 cups tomato juice
1 cup uncooked regular white rice
1 teaspoon paprika
In skillet over medium-high heat, cook bacon, drain off grease and set aside on paper towels, cool and crumble into pieces. In same skillet brown the meat with onion, pepper and garlic until thoroughly cooked; drain grease.
Stir in tomato juice, rice, paprika and bacon. Heat to a boil.
Pour into 2-3 qt. greased baking dish. Bake at 350 degrees for 45 minutes or until liquid is absorbed and rice is tender.

There are lots of great casserole recipes so I will just share my favorite.
you brown some (about a pound) boneless skinless chicken breasts in a skillet (I use a couple tablespoons olive oil, but butter also works)
You put about 3 cups uncooked min rice in a casserole dish (large) a can of cream of mushroom soup a can of cream of chicken soup and 2 and a half to 3 cans of water depending on if you prefer it on the moist side or the dry side. Salt and pepper to taste. Then mix the chicken and a cup of Cheddar cheese into the rice mixture. Cook it in a 350 degree oven for about half an hour (until the rice is done).
I also like to add a cup or 2 of broccoli to mine. you can add anything else you like green chilies are nice.
Also instead of adding the cheese you can mix in a couple tablespoons of salsa con queso for a Mexican flair.

Khodra bi Furn (Lebanese Casserole) *****
Ingredients
2 large potatoes, peeled and boiled
1/2 cup yogurt
1/2 cup chopped green onions
1/4 cup chopped parsely
1-2 tablespoon oil
1 onion, chopped
garlic, minced
1/2 cup bulgar wheat
1 medium eggplant, cubed
1/2 cup mushrooms, sliced
1 cup frozen peas, thawed
fresh bazil, oregano, thyme, salt & pepper to taste
Directions:
1. Mash the boiled potatoes with the yogurt, green onions and parsely. Season with salt and pepper and set aside.
2. In a large skillet or wok, fry the onion, garlic and bulgar wheat in the oil until onion is translucent (about 5 minutes.) Season with salt and pepper while frying.
3. Add the eggplant and mushrooms and continue cooking, covered, until the eggplant is just soft, about 10 minutes. You could also add 1/2 cup of chopped celery and/or 1/2 cup of chopped green peppers, if you'd like.
4. Add the peas and herbs. Continue cooking, covered, for about 5 minutes.
5. Place the filling in a deep casserole dish and spread the mashe'd potatoes on top. Bake uncovered for 40-45 minutes at 350 degrees F.
Serves: 4-6

My husband makes a really good porkchop casserole...
cook porkchops in crock pot all day on low.
mix together (in casserole dish) uncooked rice, 2 cans of cream of mushrooms and 1-2 cans of water (depending on taste of rice..moist vs. dry), then add porkchops on top.
cook in 350* oven until rice is tender and all the water has been absorbed.
add salt and pepper to taste.
Really good!

Since your name is Florecita, maybe you'll like this one, it's my favorite.
1/2 bag of tortilla chips (spiced or flavored is good)
1 can of cream of chicken or mushroom soup, or gravy
about 1 cup cooked/diced green chiles, or green chile salsa
1 cup diced or crushed tomatoes
1 1/2 cups cooked chicken (good way to use leftovers)
1/2 cup diced onions
1 cup shredded/grated cheese, jack or cheddar or both
Layer bottom of large pan with tortilla chips. Mix the chicken with soup/gravy and onions and spread over the chips. Spread the green chilies and tomatoes next, then top it all with the cheese. Heat in 325 degree oven to heat through and melt the cheese, about 20-25 min.
