Find the recipe for funnel cakes online. I would think you should use the legitimate one bc otherwise they will turn out too heavy.

Funnel Cake With Pancake Mix

I can't recall exactly what the difference between the two is. You can look up the recipes for each and compare to answer that part of your question www.food.com or www.recipes.com

What I DO know is that I have tried using pancake mix for funnel cakes before and it didn't work. It got too gummy and didn't fry. MAYBE I didn't have my heat high enough, but lean towards the theory that funnel cake batter is unique from pancake batter.

Add extra sugar, maybe an egg... a little cinnamon and nutmeg and oh don't forget the vanilla and make it a little thinner with milk, the milk keeps it from being all heavy. Be sure of the temp, it is critical. That will work out just fine... mmmmm funnel cakes.....

Funnel cake batter is two eggs and extra milk, pancake batter is one egg and little milk. Other than that the batter is the same.

I'm not sure.
Give it a try, what can it hurt?
I've seen funnel cake mix/kits for sale. Research into them.
