Probably Dr. Perricone or Howard Lyman (The Mad Cowboy) that you saw on Oprah. ANYway, the general consensus is that the Standard American Diet (SAD) is just plain, well, sad. Our foods now contain so many processed items, salt, sugar, preservatives... all things were weren't meant to eat and only promote growth of nasty yeasts and bacterias in our bodies... which lead to a lot of the illnesses that seem to be becoming more and more common in our society.
The standard vegetables and fruits we purchase at the generic grocer down the street is typically coated with tons of pesticides and has been irradiated so much (to 'preserve freshness') that they have a fraction of the nutrients that would have otherwise been present. Meats and cheeses are contaminated not only with pesticides (because the FDA doesn't regulate how much pesticide is used on animal feed crops) but also antibiotics.
Some books that touch on these issues: "The Mad Cowboy", "No More Bull", "The Omnivore's Dilemma"
At this point, whether you're a granola tree-hugger or not, organic is the way to go if you want to make sure you're eating well.. and cooking your OWN foods is even better than buying prepared. That way you at least know what's going into your body when you eat it.

I'm not sure, but I've been hearing alot about the dangers of high fructose corn syrup. Fructose is the natural sugar found in fruit, but of course when you try to synthesize it at a preservative, it can do you some harm. It's believed that foods with this ingredient makes you crave it more, and eat it more.
The problem is that it's in almost everything: bread, cereal, soda, juice

I wouldn't trust anything I heard on Oprah. Just stay away from things you are allergic to and don't eat to excess and you will be fine. But stay away from trans fats.

Preservatives, colorants, basically anything that you can't pronounce without a dictionary.
