The old city of Toronto. That is where the most convergence happens. But it's hard to say. Living in Scarborough, there's tonnes of people from China, Caribbean, South East Asia (Sri Lankins, Pakistani, Indians, etc). Italians, Greek... damn... it would take too long for me to list.

I'm sure there's just as much mix anywhere else in the GTA.

But the greatest/highest diversity is probably closer to the core.

I think you wanted to get off somewhere on the subway line that is more fun than others ? Anyways thats how I interpreted it. And I think Queen's Station with Eaton Center and the whole downtown area is the best place to get off the metro and have fun.

I am assuming that you mean ethnically diverse. It depends on your ethnic background. Woodbridge which is in the GTA has a high volume of Italians. Brampton, has a high volume of
East Indians. Mississauga has a high volume of Asians...but there is a reason they call Canada the melting pot. We have all different ethnic groups living in all areas.
