Eggs usually only smell if they're rotten. There shouldn't be a smell at all in your cake. Either you're highly sensitive to eggs (which is doubtful) or there is some other ingredient producing the smell. Try a different mix or different flavours. Lemon or coffee perhaps.

I understand what you are saying. Usually my grandparents would take the eye out of the egg. It's a clear jelly thing attached to the yoke. After which they would use some rum or wine. vanilla is like a spice, it gives the cake flavour and wouldn't get rid of the "egg" smell. So try the rum or wine and see what happens. Bye-the-way, not too much.

Sometimes, I substitute the eggs required in a recipe for applesauce. I use 1/2 cup apple sauce for 1 to 2 eggs. The apple sauce helps bind the cake together and makes it moist. The cake tastes great, too.

I've never heard of a cake smelling like eggs. Maybe you should try a different cake recipe or put icing on the cake. Then it'll smell like icing:)

maybe that your eggs were starting to go bad. I have never had this problem before.

i use the scale of 2 lemons ...very fine grounded lemon peel...it tastes great and smell good too.
