Lemons. Squirt them all over it and tea bags in the boot for a while will absorb the smeel. Ground coffee is good at absorbing as is salt.
It will stick around for a little while though so get a magic tree!

Does your boot zip off? (am I right in assuming you are referring to the boot that covers your shifter?) You might need to take your center console apart and clean all the pieces really good. That may be the only way to get rid of the smell- you should be able to get it apart using a phillips and a flat screwdriver, some of the plastic pieces also snap into place. This has happened to me twice.

Anyhow the first time I steam cleaned it with one of those portable steam things you see on the telly. That actually did a pretty good job of sterilizing everything. No smell afterwards.
The second time I wasnt so lucky and there was a still a bit of a lingering smell so I put one of those Neutradol pots under the seat. It lasted for weeks until the smell gradually faded.

I spilled a million/2 gallon of milk in the trunk of my vehicle over the summer season. OMG!!! I sucked the milk out repeatedly with a friends dry-vac, shampooed, and sprayed an scent neutralizer on in over the path of a few days. yet another element that helped grew to become into protecting the domicile windows down, trunk open to enable the vehicle air-out on each and every occasion conceivable. good success with that!

You could try sprinkling some bicarbonate of soda and vacuuming it out, leave it over night. Either that or take the carpeting thing out, wash it and leave it in the sun, use that Dettol spray stuff to clean under the carpet space and check out where the spare tyre goes as well, damn milk goes everywhere........

pressure wash it with a mixture of water and pinesol. then leave the Windows and doors open for the whole day. got rid of my spilt milk, but i got a baby.

scrub the area and stick in a airfresher like oaust .
if you can lift the material in boot off clean the whole boot and hose the material down and wash.

I DO NOT CARE WHAT YOU USE THE SMELL WILL HANG AROUND FOR AWHILE THE ONLY WAY YOU WILL GET RID OF THE SMELL IS TO PULL THE CAR CARPET AND GIVE IT A DEEP CLEANING.
