Boneless Skinless Chicken breasts
Honey mustard
Can of French fried onions

Put the onions in a baggie and crush them
Coat the chicken breasts in the mustard
Roll the mustard covered chicken in the onions crumbs.

Place the onion crusted chicken in a pyrex dish and bake for 40 minutes at 400.

3 to 6 cups vegetable oil (more or less depending on pot used)
1 whole chicken, cut into 8 pieces, or 3 pounds boneless chicken breast
3 eggs
1/4 cup heavy cream or water
Breading:
2 1/3 cups soy flour
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon poultry seasoning
Preheat oven to 350 degrees F.
Place a heavy pot over medium-high heat with at least 1-inch of vegetable oil for boneless chicken and 2 inches for whole pieces. Heat oil to 350 degrees F; it is important to monitor and maintain the temperature, or the soy flour breading and your oil will burn. (Portable deep fryers at home are great for this.)
In a medium bowl, mix the eggs and cream to make an egg wash. In a separate larger bowl, mix all the breading ingredients together.
Season the chicken well with salt and pepper. Dip it first in the breading, then in the egg wash, and then back in the breading again, making sure to coat well on all sides. Pat off any excess breading and then carefully place into hot oil and fry until golden brown and crisp, just a few minutes. Remove and drain on paper towels.
Boneless chicken breasts, if thinly cut, may cook all the way by frying alone, but whole chicken will not because of how fast soy flour browns, it is best to piace any chicken you fry with soy flour on a sheet pan and finish by baking at 350 degrees F for an additional 10 minutes for boneless chicken and 20 to 25 minutes more for cut up chicken pieces that have bones. The internal temperature of the chicken should register 165 degrees F. Serve immediately.
Cook's Note: Soy flour is made from toasted soybeans and has already been "cooked." Therefore it has a tendency to brown faster than plain flour when frying. Try this same breading for onion rings, baked pork chops, okra, mozzarella sticks, mushrooms, onion rings and eggplant.

MOCK CHICKEN CACCITORE (Freezes well so make a big batch) Lightly wilt a chopped onion, couple cloves of garlic, and some bell pepper pieces (if available) in a small amount of olive oil. Remove from pan and set aside. Add your chicken pieces--brown on all sides. Add vegetables back to pan. Add a can of premade spagetti sauce. (The canned ones on the bottom shelf at the grocer are cheap and very good-like Del Monte). Cover and simmer on low for about 15-20 minutes. Serve over rice or pasta. .

Lemon-Garlic Chicken Dinner

Prep Time: 10 min

Makes: 4 serving


2 cups MINUTE Premium White Rice, uncooked
2 cups frozen peas and diced carrots
1 can (14-1/2 oz.) chicken broth
1/2 cup water
1 medium lemon
1/3 cup SHAKE 'N BAKE Garlic & Herb Seasoned Coating Mix
4 small boneless skinless chicken breast halves (1 lb.)

PREHEAT oven to 375°F. Mix rice, vegetables, broth and water in 13x9-inch baking dish. Grate enough of the lemon to measure 1 tsp. grated peel; set aside for later use. Cut lemon into thin slices; arrange evenly over rice mixture.
MEASURE 1/3 cup coating mix into shaker bag. Add grated peel; shake gently to combine. Coat chicken with coating mix as directed on package; place over lemon slices.
BAKE 30 min. or until chicken is cooked through (170°F). Serve with the lemon slices, if desired.

Prepare as directed, using fat-free reduced-sodium chicken broth.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream

Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta, etc.

Crispy Oven-Baked Chicken

2 cups cornflake crumbs
1/2 cup grated Parmesan
2 teaspoons salt
1/2 teaspoon ground cayenne pepper
3 eggs
24 skinless chicken drumsticks (about 4 ounces each)

Preheat oven to 350 degrees F.
Line 2 shallow roasting pans with aluminum foil. Coat with nonstick vegetable oil cooking spray.

Mix together cornflake crumbs, Parmesan, salt and cayenne pepper in large bowl. Lightly beat eggs in shallow glass dish. Dip each chicken drumstick in egg; roll in cornflake crumbs to coat. Place on prepared pans. Lightly coat chicken with nonstick vegetable-oil cooking spray.

Bake in 350 degrees F oven, without turning, for 1 hour or until internal temperature registers 180 degrees F on instant-read thermometer. Serve the chicken hot, warm or chilled.

Chicken Noodle Casserole INGREDIENTS: * 8 ounces egg noodles, uncooked * 1/2 cup butter (8 ounces) * 1 cup sliced mushrooms, about 4 ounces * 1/3 cup flour * 2 cups chicken broth * 1 cup milk * 2 teaspoons salt * 1/2 teaspoon pepper * 2 cups cooked diced chicken * 1/3 cup grated Parmesan cheese PREPARATION: Cook noodles according to package directions and drain. In large skillet, melt butter in a large skillet over low heat; sauté mushrooms. Blend in flour, stirring until smooth. Gradually add broth, milk, salt and pepper, stirring constantly until sauce is thickened. In a buttered 2 1/2-quart casserole, combine noodles, chicken and sauce. Sprinkle Parmesan cheese over top. Bake chicken noodle casserole 20 to 25 minutes in a preheated 350° oven.

my wife makes this: get chicken breast and put in foil and drizzle a little red wine on top. add cut up onions, bell peppers and muchrooms on top then rap it up and put it on the grill or in the oven for a couple hrs. serve it on top of brown rice...yummm
