I have a nice recipe, but I can't find it, so I'll try from memory.

You take sole fillets, clean and dry. Combine in a bowl, cooked rice, chopped broccoli, melted butter and lemon juice.

In a baking pan, 8" x13" put a layer of the rice mixture.

Put a small amount of the rice mixture on the sole fillets. Roll up each fillet and secure with a toothpick. Place the sole on the rice mixture. Drizzle with butter and lemon juice mixture. Cover with foil. Towards the end of baking remove foil.

I think the temperature is 300. Time I'm not sure about, but fish cooks fast.

It is delicious, and the sole melts in your mouth.

The mild fish, like cod, snapper, halibut are my favorites, But A nice peice of salmon baked with lemon pepper can be very good. I will sometimes get the Ahi tuna, cut it into 1 inch squares, and wrap it with bacon (I/2 slice) and put it on the grill, with lemon-garlic butter , Now that is good!

I like orange roughy or if you can afford it, sea bass.... butter sauces are fantastic with fish, just add butter to a hot pan and swirl off the heat if it seperates try again it should still look creamy, add any flavorings you like. Vinegareetes are nice too, Grill the fish or bake it. Only grill fatty fish

Salmon is very good with lemon juice, salt, pepper, and lots of dill sprinkled on it, then stuck under the broiler for 10 minutes or so. I'm also a big fan of halibut, rubbed with spices (I like either garlic or a combination of spicy, like cumin, chili powder, etc.) and sauteed in a skillet for a few minutes. YUM!

I love Orange Roughy. It is a white fish with a very mild, not-too-fishy flavor. It's great for fish tacos or broiled or grilled with butter and lemon pepper.

Grouper, halibut or talapia - all easy to cook! Top with some lemon butter broil or pan cook until slightly firm to the touch! Healthy too!!

Salmon (you can marinate it with italian dressing) or just grill it and put your own spices like lemon pepper or whatever you preper.

Or fry a catfish in fish batter.

Or fry a catfish or other fish, and stir fry like bell peppers and hot peppers and pour over catfish.

Or slice the catfish into 1 inch slices, and put in batter and fry...you can use it to make fish tacos or fish fajitas (in tortillas)

Buy some salmon...place it in a crock pot...top the salmon with a layer of mayo and sprinkle on a few dashes of Spike seasoning (or any seasoning)...in a couple of hours you will have a delicious main course.

salmon is always good; baked or fried with a little salt and pepper and turmeric. although, if you can swing it, barbecued over a cedar fire is amazing!

any kind of fish is good though, the important thing is to make sure it's fresh! that will eliminate the strong "fishy" smell.
