Made mainly from molasses, rum is a product of the sugar production process. Yeast is added to most rums, but it is not as essential as the sugar in molasses ferments on it's own.

Light rums-
are distilled in column stills and stored in tanks for a brief period before bottling, sometimes up to one year. The most notable among the light and puerto rican rums is bacardi, which is originally made in cuba.

Heavy rums-
the golden rums are medium bodied and mellower than lighter varieties. Thier color comes from the wooden barrels in which they are aged, as well as the addition of caramel for flavor.

Dark rums-
are often designated by a red lable and are best for sipping. They are distilled in pot stills and aged from 5 to 20 years.

Rum is a distilled beverage made from sugarcane by-products such as molasses and sugarcane juice by a process of fermentation and distillation. The distillate, a clear liquid, is then usually aged in oak and other casks.
