How do you know if sweet banana peppers or ancho peppers are ready to pick? Any suggestions on using these?

peppers can be picked at any stage of development. Picking them rather small will encourage the plants to produce more peppers.

Any pepper that is ready to pick will come off when gently thumped. if it doesn't its not quite ready. Never yank them off the plant!

I only know that bananna pepers will get yellow like the sun. Then you pick them...
