By slightly undercooked, I mean that it looked fully cooked on the outside, and I flipped it once in the oven and the side that was facing down at first wasn't as cooked as the other side and there was a very mild pinkish hue. Also, to clarify my question, I'm more worried about bacteria than something as abstract as bird flu, which I know can also be addressed by fully cooking the meat.

Pink chicken! Yes, you should be worried. I'm sorry to give you the bad news...

Chicken should be cooked to a minimum internal temperature of 165F, which is hot enough that the meat will be white and the juices will run clear.

You can figure the odds are 1 in 3 that the chicken had either Campylobacter or Salmonella prior to cooking, the two most common food-borne illnesses in the United States. Let's hope you got lucky. Both diseases have general symptoms of vomiting, diarreah, fever, and general malaise. Salmonella has a incubation period of 12-36 hours; Campylobacter's incubation period is 3-7 days.

If you get sick, go see a doctor. Assuming you're in good health, neither disease is likely to kill you. But they're definitely not a pleasant experience.

I wouldn't panic..Yes it sounds like you might have ate some part of the chicken that was undercooked but I wouldn't be concerned..and the possibility of the "Bird flu" is very unlikely since these are chickens that are grown and prepared in a environment that is sanitary and regulated..the bird flu if you have seen and read have occurred in counties that practically live with their livestock or are in close proximity to them..

If the chicken still has a pinkish color to it- its definetely not cooked all the way and there is a risk of making you sick with under cooked chicken! Just watch yourself for the next day or so and go to hospital at FIRST SIGN of illness!!!

If you don't seem to have any ailments at this point you should be fine... I would suggest taking some vitamins in the meantime to boost your immune system... If you start to feel sick, call your doctor and they will give you antibiotics...

Fresh cilantro is supposed to kill salmonella. Go eat some and get a meat thermometer.

RELAX...I undercooked some on the barbeque a couple of days ago and we're still here and OK.... and OK.... and OK... and OK?
