It may not be fine...It depends on the level of sugar, salt and acid. If the levels of any of these are too high it may actually begin to cure, or worse, "cook" the meat. Meats and fish are cured in higher concentrations of sugar and sodium (salt). Seviches, basically marinated seafood composite salads, are "cooked" in the acid of citrus. Vinegars have the same effect. If the meat begins to cure it will become tough.
I would remove the meat from the marinade, seal them in a plastic baggie after removing as much of the air as possible. The meat will PROBABLY be fine...if it is tough you will know why...
Hope all turns out well and at the very least enjoy your friends! We have to have our priorities, right?

Depends on the meat! The best tandoori chicken is marinated for 2-3 days! Fish & shellfish, 30 min is long enough (1 hr max).
For steaks, it's fine --- it sounds delish!! If they were stored in the refridgerator, you should be fine. Not more than 3 days max.

Yes its completely safe to leave the steaks to marinate 2 days! Just be sure the container they are in is sealed tightly so no air can get to it and it will be fine! Probably even taste better too!

My dad used to marinade chicken breasts in italian dressing for up to 3 days if plans got changed.
Also, I know of a german dish that marinades in mostly vinager for up to 6 days.
The longer you soak 'em, the deeper the flavors will go. Thicker steaks shouldn't be a problem. If they're thin you might over-flavor them.

You should not marinate for more than 1 day.
When you marinate you should cover the pan that the meat is in and place it back in the fridge.
The beef or chicken will start to go bad if left out at room temperature.

They will be fine for another day, I would not leave them longer than that though. Marinating for too long will break the meat down, making it pasty.

Yes, but move them to the coldest spot in the refrigerator so the opening and closing does not impact the temperature too much. You must cook them no later than tomorrow. If they smell or look weird tomorrow, don't risk it.
