Whenever you take pictures of the sun set, the automatic exposure and white balance can go bezerk and results can vary from shot to shot.
Short of going fully manual and using the histogram, just snap a few shots for insurance.
If there´s something of interest in the foreground (like your wife ;-) use the flash.

Well, theres a number of options...you could try 1/50th of a second shutter speed to start and gradually go a bit slower (1/40, 1/30,1/25,1/15th etc)
And use a medium aperture of about f4.0.
Choose TV to select the shutter speed...camera will select appropriate Aperture value.
Choose AV to select your preferred Aperture..e.g. f3.5, f4.0, f4.5 etc. Camera will select correct shutter speed (it does this by determining how much light is available)
Use M to select both shutter speed and aperture value (f stop) when you get more experienced and wish to try your own settings.
Don't forget to use a tripod...because any movement in low light will result in a blurred image (time delay is also a good idea)
Just practice with various settings....you will get the hang of it.
In time, you will learn which settings are best...and which settings will give you the correct exposure etc.

Try a medium focal length and fast shutter speed.
