what kind of pan are you using to cook your zuccini. I cook it all the time and i have never had the bad taste.
You can slice it and steam it.. You can bake it. I fry mine with potatoes. am cooking some now in a roaster with chicken and potatoes. i will just lay long strips of it on top of the potatoes it will steam there really good.. should only take about 20 minutes for it to cook.
drizzel some butter over it or fry it in butter. there are so many ways to cook it..
shread it and put about a cup full of it in your cakes or cookie batters it makes everything so moist. and you will have the nice puffed up cookies or really moist cakes.
Keep trying.. it is a good veggie. and I wish i had someone to give some to that are growing out in my garden.. will be feeding them to the chickens soon i think. just keeping what i can eat..

I'm not sure what would be making your zucchini have an acid taste. It actually could be the zucchini itself and not the way you are cooking it. Try to pick out small to medium size ones as the others may be too mature. But I've used those also without a problem.
Hummm, still don't know what to suggest.
How about trying my recipe and see if it tums out better for you.
Take about 3 medium sized zucchini and slice them about 1/2" thick. (not lenghtwise) put these aside for a few minutes while you fry about 6 slices of bacon that you have cut into smaller pieces and one small onion, chopped. Saute these until the onions are transparent., usually about 5 minutes using med heat. You don't want to over fry your bacon as you do not want it crispy. When you have sauteed the bacon and onions add your zucchini and slight fry it in the bacon drippings. Now what you should have is a mixture of zucchini, onion and bacon. Now you add about two cups of tomato sauce (or stewed tomatoes or tomato paste diluted to the consistence of tomato sauce) to the zucchini mixture and add about 2 teaspoons Italian seasoning and slowly simmer until the zucchini is cooked through, usually about 6-8 more minutes. Now you can either eat it like that or you can use it as a pasta sauce over what ever you have on hand. (Macaroni, spaghetti etc.) It really is delicious.

Slice your zucchini in halves, then marinate it in a blend of extra-virgin olive oil, white balsamic vineagar, whatever herbs you may have on hand, a bit of dijon mustard, and salt and freshly-ground black pepper. Let it sit in that for an hour or so, then grill it over a high fire, or broil it in the oven for a few minutes per side. It's extraordinarily tasty, and works great with summer squash and mushrooms too.

I slice them and make shiskabobs with a good cut of beef, sweet green peppers, Yukon gold potatoes, new potato's and onions. I grill them over medium heat.
