Here's a couple of easy recipes
Peel and slice cucumbers, slice some onion put in a bown with some "Seven Seas Green Goddess" dressing and some vinigar. Let it sit before you eat (its a variation of cucumbers & sour cream) Green Goddess is a cucumber salad dressing
Boil& drain frozen cheese torelini and cool. Add cliced cucumbers cut into quarters, broccoli bits, califlaur, and some diced red pepper add a tbs of zesty italian dressing and drench in ranch dressing, Let sit for a while for flavor to soak in.
Boil I drain Shell Noodles add a can of tuna, Mayo, Chooped Celery, Chopped Cucumber, Salt and pepper and a tsp of ranch dressing.
Take the mini cracker size pumpernickle breades. Mix cream cheese with italian dressing ix to taste and spread on, top with a slice of cucumber and sprinkle with dill - a great summer snack!

Cucumber Salad
This easy cucumber salad recipe makes a nice accompaniment to any meal.
INGREDIENTS:
* 3 large cucumbers, peeled, thinly sliced
* 1 cup white vinegar
* 3/4 cup water
* 3/4 cup sugar
* 1 teaspoon salt
* dash ground cayenne pepper
* dash dried parsley flakes
* 1/8 teaspoon black pepper
* dash dried leaf basil
PREPARATION:
Combine all ingredients except cucumbers; heat until sugar melts. Pour warm mixture over cucumbers. Store covered in refrigerator.
Serves 6 to 8
Serve with pork or as a relish with any meal.

INGREDIENTS:
16 ounces (2 cups) of strained Greek yogurt
4 to 10 cloves of garlic, diced
1/2 cup of peeled, diced or shredded cucumber
1 tablespoon of olive oil
2 teaspoons of lemon juice
PREPARATION:
Prepare all ingredients in advance. Combine oil and lemon juice in a medium mixing bowl. Fold the yogurt in slowly, making sure it mixes completely with the oil. Add the garlic, according to taste, and the cucumber.
Stir until evenly distributed. Garnish with a bit of green and serve well chilled.
Yield: about 2 1/2 cups
Add mint or dill: Slight variations include 1 tablespoon of either finely chopped fresh dill or fresh mint. Either one makes a tasty addition.
Shopping Tip:
The thick, full-fat yogurts available at Greek, Middle Eastern, and specialty food markets - or a commercial full-fat strained yogurt - will give the best results. You can also make your own strained yogurt using full-fat, low-fat, or fat-free commercial yogurt.
Preparation Tips:
After dicing the cucumber, pat it dry to remove excess moisture.
The longer the tzatziki is refrigerated before serving, the more intense the garlic taste will become.

cucumber and onion salad! slice the cukes and onion really thin. in a sauce pan add 1 cup cider vinegar, 1/2 cup white wine, 1/4 cup granulated sugar, 1 teaspoon granulated garlic, 1/2 teaspoon dill weed, 1/8 teaspoon red pepper flakes and salt & pepper to taste. bring to a boil just long enough for the sugar to desolve then pour over veggies and chill. or you could make a greek tzaziki sauce or an indian raita or even gaspacho. recipesource.com has some good recipes for them

Peel and slice the cucumbers, mix with chopped tomatoes, add diced onion, if you like onion, I don't. And then mix with sour cream or plain yogurt and salt and pepper. Reftrigerate for about an hour or so and serve it cold. I really like this for BBQ dinners. It's refreshing and super simple.

pare 1-2 cucumbers and slice in half lengthwise. use a spoon to scrape out the seeds...if seeds bother you.
slice them thinly and put in a large bowl.
slice one medium to large sweet onion thinly and add to bowl.
salt and pepper to taste
add 1- 1 1/2 cups sour cream
1 - 2 tablespoons white vinegar
mix all until creamy. let sit at least 1-2 hours and serve. the longer they sit the better flavor.

Asian style cucumber salad:
slice 1 cucumber
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp mirin/rice wine vinegar
pinch of red pepper flakes
Toss together and serve

or an israeli type sald -- mix together diced cucumber and diced tomatoes, season with parsley, a little minced red onion, add your favorite vinaigrette

Slice up the cucumber into small pieces, add some cut up boiled eggs, and mayo (I like spicy mayo). Mix it all together and put in between slices of bread. Yum!
