you can make raspberry cheesecake:
puree the raspberries and strain them, use about 1 cup
mix 1/4 cup sugar with 16 oz. cream cheese w/an electric mixer ... then add 16 oz. of softened whipped cream ... finally, stir in the raspberry puree, place the mix in a pie crust, and chill for 3 hours :-) decorate w/extra raspberries

Raspberry Creme
1/4 cup butter
1 cup sugar
2 whole eggs
2 egg yolks
1 cup milk
1 tsp. vanilla
1 cup crushed raspberries
Cream butter and sugar until light and fluffy. Beat in eggs one at a time, then yolks. slowly stir in milk and vanilla. Now heat it over boiling water until it is a thin custard. Add berries. Cool it. Serve over Raspberry Whip. Of course, the Whip can be a separate light dessert on its own with our Raspberry Claret as the sauce and the Creme can go over practically anything.
Helen's Red Raspberry Trifle
1 large Angel Food cake
1 package frozen raspberries (thawed)
5 or 6 oz. Red Raspberry Claret
2 pkg. Instant French Vanilla pudding
1 12 oz. container non-dairy dessert topping
Mix pudding with 2-2/3 cup cold milk until thick. Then fold in topping. Break angel food cake into bit size pieces. Layer cake first, then add Claret to raspberries. Then a layer of pudding mixture, then berries. Keep layering cake, pudding, berries. Refrigerate for several hours before serving. Very raspberry-y ...Claret cuts the sweetness.
Lo-Cal suggestions: Use skim milk and dry "dietetic" topping mix with skim milk (not water). Besides being lo-cal, this variation is N-F-N-C, and is still delicious and elegant. Don't forget to garnish the top with a little shaved chocolate or fresh berries.
Dr. Marvin Pritts'* Raspberry Chicken
Marinate 2 lbs. boneless chicken overnight in the following:
1/2 cup Raspberry Claret
1/4 cup white wine
1/4 cup olive oil
1/2 tsp. hot oil
1/2 tsp. powdered ginger
2 bay leaves
Cook chicken in the marinade, adding water if necessary. (DO NOT serve with fresh raspberries as the flavor will overwhelm the subtle taste of the chicken.)

Martha's Vineyard Salad with Raspberry Maple Dressing
1 cup white wine vinegar
1 cup red wine vinegar
1/2 cup raspberries (fresh or frozen)
1/2 cup olive oil
1/2 cup vegetable oil
1/2 cup maple syrup
2 TBSP. Dijon mustard
2 TBSP. dried tarragon leaves (or 4 tablespoons fresh)
Dash of salt to taste****************************************
1 head Bibb lettuce, washed and dried
1/2 head red leaf lettuce, washed and dried\
1/4 cup crumbled blue cheese > > 12 rings red onion, sliced 1/4 inch thick
3 TBSP. pine nuts toasted
1-First prepare a raspberry vinegar: combine red and white wine
vinegars and raspberries. Cover and let sit 48 hours. Strain the vinegar, store at room temperature.
(You can also use commercial raspberry vinegar, which is available at
specialty stores.)
2-To make Raspberry-Maple Dressing, whisk together in a bowl 1/2 cup of the raspberry vinegar, the oils, maple syrup, mustard, tarragon and salt.
3-Tear lettuce leaves by hand and toss in a large bowl with 3/4 cup of dressing.
To Serve: Divide lettuce evenly onto 6 chilled plates and top each
with the blue cheese, onion rings and toasted pine nuts. / Walnuts roasted can be substituted.
The Raspberry Maple Dressing can be used for a marinade for seafood or poultry.

Rasberry Peach Smoothie
I love berry smoothies. I came up with this combination last weekend. It's a nice tart tasting one.
6 unsweetened frozen peach slices
1/4 cup frozen raspberries
6 ounces peach yogurt (fat free, no sugar added)
6-8 ice cubes
3/4 cup low-calorie cran-raspberry juice
1 tablespoon honey
2-3 servings
1. Add ingredients to blender or smoothie maker,frozen items first, then yogurt, then liquid and honey.
2. Blend until smooth.
3. Add more liquid for thinner consistency, if you like.
White Chocolate and Rasberry Cheesecake Recipe Please note that you must start this cheesecake the day before you plan to serve it.
To make the crust
18 vanilla wafer cookies
1 cup almonds, toasted
4 1/2 tablespoons unsalted butter, melted
To make the filling
4 ounces imported white chocolate, chopped (such as Lindt)
2 (8 ounce) packages cream cheese, room temperature
2/3 cup sugar
2 teaspoons vanilla extract
3/4 teaspoon grated lemon peel
2 large eggs
3/4 cup fresh raspberries (may use frozen berries, unsweetened, thawed and drained)
To make the topping
1 (8 ounce) container sour cream
3 tablespoons sugar
1/2 teaspoon vanilla extract
2 1/2 pints fresh raspberries
1/2 cup seedless raspberry jam
8 servings
1. For the crust:.
2. Preheat oven to 350 degrees. Finely grind the cookies and almonds in a processor. Add butter and blend until the mixture forms very moist crumbs. Using plastic wrap as an aid, press the crumbs firmly onto the bottom and 2 inches up the sides of an 8 inch springform pan. Bake until golden, about 10 minutes. Cool. Maintain oven temperature.
3. For the filling:.
4. Melt white chocolate in top of double broiler over simmering water until smooth, stirring often. Remove from over water. Using electric mixer, beat cream cheese, sugar, vanilla and lemon peel in large bowl until smooth. Add eggs one at a time, beating just until combined. Beat in white chocolate.
5. Spoon half of the batter into the crust. Top with 3/4 cup berries. Spoon remaining batter over. Bake until edges of cake are set but center 3 inches still moves when cake is shaken, about 45 minutes. Cook 20 minutes. Maintain oven temperature. Using fingertips, press down gently on edges of cheesecake to flatten slightly.
6. For the topping:.
7. Whisk sour cream, sugar and vanilla in bowl. Spoon over cake, spreading to the edge of the pan. Bake 5 minutes. Transfer cake in pan to rack. Run a small knife around the sides of the cake. Cook completely. Chill the cake overnight.
8. Transfer the cheesecake to a platter. Cover the cake with berries. Bring jam to a simmer in a small pan, stirring often. Gently brush jam over berries. Chill before serving.

you can get a fruit juice that you think would taste good and some ice and blend it together. Thats what I do and I think they taste good.
