No, there is only one food on earth that does not have a shelf life. It is honey, even mineral water, spirits etc have a use by date. Jello is full of sugar (usually glucose) and this will degrade quickly, especially with the asorbic and citric acids in most jello.

No, that is a totally false conclusion. Jello is the perfect media for both bacteria and mold to grow in and on.

It is rich in protein that bacteria can use (this is what creates the "gelled" structure. And sugars, added to make the meat by product tasty.

In fact even "fresh" jello that is used "improperly" can cause illness. Certain "sporting" events in which the participants get into tubs of Jello to wrestle can lead to serious E. Coli infections.

No, once in Costa Rica we'd made some jello and either the temperature or the humidity hardened the outside to a crust, and turned the inside to a strange, liquidy slime. But I think that was an extreme case.
Be afraid! We certainly were.

I would eat just made jello within a week. Bacteria can grow on it if just left out in the fridge with no vacuum seal.

it becomes acidic, and it has an acidic taste.

i know because i had jello in my fridge for a long time, forgot about it, then opened the seal ate it, then realized that the seal said the expiration date had passed.

so therefore.... you can still eat it, but its acidic!!!!
