All I am planning on putting in it is egg, bacon and cheese.

Drop the mozzarella. It's a mild cheese and too stringy. Stick with the cheddar. Save the mozzarella for slicing thin and laying on top of fresh, ripe sliced tomatoes with a touch of olive oil, vinegar and basil.

I have never met a cheese I didn't like, except for Limburger. Mild cheddar and mozz should be tasty, though I'd prefer a sharp cheddar myself.

Mozzarella does get realllly stringy when melted, so I try to stick to the harder cheeses for omelets.

Yes, cheddar and mozzarella cheese would be good. If you add some Swiss cheese, it would be even better.

here's my tip:
first mix the eggs with a tablespoon of milk, cook for 2 minutes, then add shredded mozzarella on the top then fold, I suggest to use low moisture mozzarella.

Make it a sunny side up egg and toast the bread. That would be better than the omelet. Maybe add a slice of tomato and lattice too.

feta cheese and a whole milk mozzarella cheese,red onion(sweeter than yellow or white)and crumbled bacon.this is a very good combo

mozzarella and cheddar dont mix. the cheddar will drown out the mozzarella, you wont be able to taste it. go with one or the other.

In addition to your fine ingredients, at the last minute just before you fold it over, add fresh avocado and sprouts. Then remove immediately from the heat. Awesome.
