I'm diabetic too, and I cut back on my insulin, take a real cool shower, and make a big salad with veggies, sliced ham and cheese. A piece of cold fruit, and ice water. Keep hydrated

I had exactly the same situation today and here is what we ate: Crab Salad on Ezekial toasted bread and cut up vegetables (cauliflower, red pepper, radishes, cucumbers, celery) with guacamole. It was really good - especially the crab salad.
Crab Salad - I just took 1 lb of imitation crab meat and flaked it into a bowl. I added some chopped celery and onions. Then I put a few TBSP of mayonaisse and some salt and pepper and mixed it up. I toasted my Ezekial bread and put the crab stuff on top open faced. It was really good.
For the guacamole - I mashed 2 avocados, added the juice of 1 lime, some chopped parsley, 2 cloves of garlic (minced), some salt. I also added a little hot sauce. You can also add a couple TBSP or sour cream and some salsa to this if you'd like but it isn't necessary. Then dip your cut up veggies in it.
Some other ideas I have are cold turkey sandwiches and salmon sandwiches (take canned salmon and add mayo, celery, onion). You could also make a chicken salad with canned chicken the same way.

Fruit, salads,sandwiches...light food really.
I sit eating Ice lollies all day really, even one can just cool you down although with you being diabetic its not recommended, my mother (whose diabetic) is eating salad(cucumber,tomato,lettuce, carrot and some cold chopped chicken) constantly (with lemon juice on the top or something tasty on top.You can find ready made salads like this in your local shop or co-op or maybe make salads the night before and leave them in the fridge. Or freeze half bottles of water and top them up with cold water in the morning (otherwise a whole bottle of frozen water takes ages to defrost and you cant get a drop out!)

Eat from the produce area of your grocery. Get everything that is in season, and now is when the great fruits are in season; plums, peaches, pineapple, nectarines, cantelope, mangoes, berries, not to mention everything for making a great salad. Pasta salads are wonderful now too, just add some tuna or shrimp and whatever you like. It's the low to no cooking time of year and the perfect opportunity to enjoy all these things that will be gone very soon. Enjoy!

Chopped salad--dice up a red onion, green pepper and halve some cherry, grape or pear tomatoes. Mix in some diced pre-cooked chicken-leftover deli rotisserie works great- and some crumbled feta or blue cheese. Add enough italian dressing to coat, and let marinate for a few hours in the fridge. Serve over grilled or toasted french bread that has been rubbed with garlic. SO YUMMY!!!

I don't know much about being Diabetic, but if you can have it I love to have Fruit salad of any sort. If I am hot I can not eat a meal or it will make me sick. Or have you thought of some sort of healthy shake or smoothie?

I love to put mandarine oranges, drained of course, and grapes in the freezer. Can you have fruit? Another thing I like to fix when it's hot is veggie pizza. I make the crust out of Pillsbury crescent roll dough and bake it in the morning before it gets too hot. Mix together sour cream and either dry hidden valley ranch or dill dressing and put on top of the pizza. Top with raw veggies, zucchini, broccoli, cauliflower, tomatoes, sugar snap peas, mushrooms, you name it. Be sure to keep the pizza in the fridge but it's great to eat when it's hot.

A sandwich always works for me. Lots of crispy lettuce and only a little bit of meat makes sandwiches a light and wonderful meal on hot summer days when the last thing you want to do is eat a big, hot meal.

We eat lots of salads and lots of fresh fruit. I keep cut up fruits and veggies in the fridge so we can just grab something convenient.
Of course, the kids love popsicles and ice cream too. ☺
