Not with french fries you didn't. Means to place in boiling water for just about 30 - 60 seconds, remove, and immediatley place in ice water to stop the cooking process.

Blanching is also an effective method of loosening the skin on fruits or nuts that one may wish to peel, such as onions, tomatoes, plums, peaches, or almonds, and is sometimes used as part of the process of reconstituting dried or cured ingredients to remove excess salt or seasoning.
In addition, blanching enhances the color of some (particularly green) ingredients.
Steam blanching is also used to neutralise bacteria and enzymes present in foods so that they may be processed and gain a greater shelf life, such as peanuts.
Blanching can also describe deep frying in oil at a lower temperature as with the initial cooking of French fries/chips.

blanched means to precook or al dente, almost to a full cooked product, for easier and faster cooking in restaurants. you can do this in oil and water, etc french fries, veggies.

You can blanche french fries or veg,it means to part cook(oil or water) without color then when required its into hot oil nice and brown, wallah! Ps water for veg, rice etc.

green beans --- boil for a minute and ice down for brighter green

home made french fries -- in hot oil for a couple minutes in some restaurant because it allows for faster cooking (the second time). When I worked for Sonic Drive in 30 years ago we did that.

Bllanched in short, means dipped in Boiling water for a minute or two. This softens, but prevents mushiness.

Basically it is precooking the food in super hot oil, so it can be fried properly when needed. Makes the final cooking time much shorter.
