They are both correct. It depends on the context, in determining which one to use.
In the first instance, "once" means "in the past." In the second instance, "once" means "one time."
Just for example:
"I went to London once in order to rescue my sister from Morrissey." ["In the past I went to London to rescue my sister from Morrissey."]
"I have traveled the world many times over. I have been to Greece eight times. I have been to Pakistan on three occasions. I have been to London once." ["...I have been to London one time."]

two is a general statement that the speaker has visited London one time in the past.
one could be the beginning of a story: "I went to London once. I was 19 years old and really loved Trafalgar Square and Piccadilly Circus..."

Well, they both are. It depends on what form the question is asked of you.
For example, if someone asked, "Did you ever go to London?" the answer could be "I went to London once." Note: "did you ever?"
If they asked, "Have you ever visited any British cities?" the answer could be, "I have been to London once." Note: "Have you ever?"
Technically, this is the difference between the past simple and the past perfect tenses.

Are you saying that you have been there one time? or you're just stating that you have been to London?
If you're saying you have been there one time it would be the first one.
Otherwise it should be: I once went to London.
I would say that sounds more correct?
