What type of curry? There are several curry listed. My favorite is shrimp curry - all you need is finely chopped onions, mushrooms, mashed garlic, a few strips of ginger, curry powder, cummin, cayenne, salt and pepper to taste and sugar. Heat up some cooking oil with butter then saute the onions, garlic, ginger, curry powder, cummin, cayenne powder (dash) and add in the shrimp. You can either take off the head of the shrimp and leave the skin on or you can unshell the shrimp (but its tastier with the shell on) - stir fry everything then add in the mushrooms. Sprinkle about a teaspoon of sugar over the shrimp while you stir - use medium fire when you do this, sugar burns and darkens the sauce. Remember - none of the powder ingredients are over a teaspoon, the cayanne is just a dash because its hot and spicy. Cooking time - 15 minutes or less depending on the size of the shrimp. Enjoy!

vegetable curry
My recipe uses cauliflower but you can use any vegetable or mixture of vegetables you like. The recipe uses the portion of Basic Curry Sauce that you would have left over if you were making one of the Main Dishes. Handy eh?
Ingredients
1 tablespoon vegetable oil
1 cauliflower - washed, cut into small florets and dried on kitchen paper
half teaspoon good chilli powder
half teaspoon turmeric
half teaspoon ground coriander seed
half teaspoon ground cumin seed
third to half a batch of Basic Curry Sauce according to what you've got left over and how "saucy" you want the vegetable curry
salt to taste
Method
heat the oil in a large pan over a moderate heat
Put the cauliflower florets in the pan and stir fry until the cauliflower gets little brown patches
Sprinkle the chilli powder, turmeric, coriander and cumin over the cauliflower and stir fry for a minute to mix in and warm the spices.
Add the Basic Curry Sauce and salt and simmer on a low heat until the cauliflower is just cooked

Just add Curry powder to a very thin tomato sauce. Add Cayenne pepper to spice it more if you want. Simmer whatever kind of meat you like in it and cook some rice or nan (pizza dough cooked on flat pan.
