I'm making a wedding cake, and I'm trying to figure out the best filling. The bride want's raspberry, but she didn't (and won't) elaborate. Should I use raspberry preserves with pastry cream, or raspberry flavored buttercream? What do you like better? The cake itself is french vanilla.

If there is more than one tier, you can do a different flavor for each layer.
Raspberry (seedless preserves) mixed w/ a creamcheese filling is delicious.
This can compliment a lemon layer and then a chocolate/hazelnut top layer.

I would do the raspberry buttercream...I can see too many problems with the preserves in pastry cream (like leaking out). Good luck!

The raspberry preserves might probably be a better choice to complement the french vanilla. Just a bit of natural sweet to go with the cake.

I would go with the preserves. The buttercream would probably make it TOO sweet and not everyone likes sweet cakes.

most people put real fruit in the filling so use the preserves. and make sure it's the kinds without seeds. raspberry seeds are horrible and they stick in your teeth.

I would go with the preserves only because you will have the sweet icing.

i've always seen the fruit filling...but i think it maybe easier with butter cream....could be quite tastey too :) either way good luck!
