I think you will never get to know the truth as to the fastest plane. Governments are not so stupid as to let people know what is going down.

The Lockheed SR-71 Blackbird with a maximum speed of 3500km/h (2 200mph, or over Mach 3).
The SR-71 officially set the air speed record on July 28, 1976 when it set a two way average speed of 3529km/h (2193 mph) around a closed course in California.
Only the experimental North American X-15 surpasses the SR-71 for the outright record for a manned aircraft at 7274km/h (4520mph).

The North American X15A is the fastest acknowledged aeroplane: rocket powered and lauched from a B52 it was capable of around 7,000 mph (c.Mach 12) compared to the Mach 6 of the SR71. NASA and the USAF used it and pilots who flew it were classed as astronauts, among them was Neil Armstrong.

If by airplane you mean one that takes off on a runway and returns the same way, then the SR-71 Blackbird has the honors.

Technically, the SR-71; however, the shuttle during landing is a flying body that generates lift. It could be considered the fastest.

There is a US military jet called the "Haboo" (might be mis-spelled). I don't know it's military call numbers. They were supposedly mothballed in the mid-90s, but I saw CNN footage of them being used in the invasion of Iraq. The only thing faster than it that flies is the Space Shuttle.
