A handwritten note addressed to all at the company is necessary. Try something like this (feel free to add additional comments).
"My brother and I would like to express our heartfelt gratitude for the generosity shown by management and the employees of (insert company name here) after the loss our mother, (insert your mother’s name here). Our mother would have been touched by the show of support from her friends and others at (insert company name here).
Thank you again, not only for the generous gift, but for the support you showed our mother during her battle with cancer. Your caring and kindness, both during after our mother's life, will never be forgotten."
You might also want to donate a portion to the American Cancer Society or the particular group doing research to find a cure for the specific type of cancer she lost her life to. If you do make a donation please include that in the letter to her employer and friends at the company she spent 15 years at.

I would suggest sending a heartfelt, hand written letter. Too few people put the time and effort into actually writing out their feelings of thanks. It was a very kind thing the company did (it wasn't some sort of company insurance that they owed, right? it was a gift?) and should be recognized properly.
I wouldn't spend money on flowers or a gift basket or anything. They gave you that money so that you could take care of your mother and continue with your life, not so you could buy them a gift.

Whatever you feel in your heart. Usually people give checks and money collected from others to help pay for the services. They feel good knowing they've helped ease this kind of burden. You can say something like it help you provide a fitting service for your mother and you're you glad to know she worked for such a compassionate organiztion.
