I need to remove the skin from roasted Anaheim peppers for a green chile recipie. I can never get it all off - any hints?

Roast the peppers on grill till black all the way around and then place them in a brown paper bag to cool. The skins will fall off.
I don't know why? But it works great!

After you roast the peppers put them in a brown paper sack and close it up and allow it to steam for about 10 minutes. Take 'em out of the sack and just rub the chared skin off. Don't do it under running water though, it will affect the taste negatively. Rinse your hands and dry them a couple times if you need to. This has to be done right after they're done steaming or it gets really difficult if you let 'em sit too long. I've done this for years with a variety of peppers and no problems. Nothing like roasted peppers.

After roasting, put them in a brown paper bag for a few minutes, then peel them while running cold water from the faucet over them. Use gloves, and if you don't have gloves, don't touch any sensitive part of your body, such as your nose and "other places". You can get gloves by asking for a pair at a deli counter. They may charge, but it will be minimal and it's worth it to prevent your hands and other things from burning from the heat of the chile.

The bag answer is correct. It is the trapped steam that loosens the skins. Works like a charm. Watch out for hot peppers and your eyes. I took a trip to the hospital once and lost three days work!

put them in a 400 degree oven 15-20 min.
put them in an old butter container with a lid,cover for twenty min . Remove lid , skin will fall /peel off at will. Happy roasting!!

pop them under a broiler or if you have an open flame (grill, gas stove) and char them real well. after that put them in a paper bag or put them in a bowl and cover with plastic wrap or paper towels (whatever to keep the moisture in). after about 15 minutes (or when they are cool) go back to them and the skin should be loose and just peel away! don't rinse them if you want to keep the charred flavor or rinse them if you want them really cleaned off. have fun with your dish! hope it's good!

It's very messy but if you do it in a bowl of cold water it makes it easier... and there is a colecting place for the skins

YOU COULD PUT THE PEPPER ON THE STOVE TOP,UNTIL IT GETS BLACKEND THENPUT THE PEPPER IN COLD WATER AND IT SHOULD PEEL OFF PRETTY EASY.
