Maybe you're not cooking it long enough. To test bread and cakes, insert a long thing metal or wooden skewer into the middle of your baked goods. If it comes out clean, it's done. If not, keep it in for another 10 mins, then check again.

I agree with Storm Rider. A breadmaker is the answer. Just think of the heavenly smell of freshly cooked bread as you wake up in the morning (there is a timer option on them). If you get one though go for the Panasonic, I have had mine for over 10 years now and I have never had soggy bread etc. In fact every loaf has come out looking exactly like a loaf!

There may be a number of reasons for this. You may have put in too much water so try reducing the liquid content. On the other hand, you may have cooked the bread too fast, so extend the cooking time.
Another factor is that all flours are different, so make the dough accordingly and keep an eye out for very dry dough and add water cautiously.

Maybe you are baking it at too high a temperature? This would cause the outside to bake long before the inside. Which means you either end up burning the outside to cook the middle or, as in your case it seems, you end up with a nicely done outside and an unbaked middle.

Too much fluid or not baked long enough. if it was timed correctly then the temperature may not have been correct. Electric ovens have those dials wit 200 Deg etc on old ones they are not accurate

You didnt bake it long enough. To tell if the bread is done, give it a light tap on top. If it sounds hollow, its done. If the crust is too brown befors its done, lay a piece of foil on top.

Go buy a breadmaker. Use the recipes that come with it, follow them to the letter and measure the ingredients accurately.
