no its not rotton...Sliced cooked beef or lunch meat can have an iridescent color because meat contains iron, fat, and many other compounds. When light hits a slice of meat, it splits into colors like a rainbow.
There are also various pigments in meat compounds which can give it an iridescent or greenish cast when exposed to heat and processing. Iridescent beef isn't spoiled necessarily. Spoiled cooked beef would probably also be slimy or sticky and have an off-odor.

I'd be more concerned if I did not see it on a cold roast beef becuase it would likely mean it was dried out and would not be very good.

all roast beef looks like that. I think its just the natural oils in the meat.

That happens. Its called oxidation. And its normal, Sometimes you can see that on fresh steak. In particular, eye of the round steaks.

I think you are referring to 'Silver-side' roast/corned beef.It has a patina of almost spectrum colour,It is so Good ..use it when make your next "Ruebens" .Great stuff.(No pastrami...but what you gonna do..eat rabbit..just kiddding..)
