Seven Layer Salad
Bag of iceburg lettuce
1 large red onion, chopped
1 green pepper, finely chopped
celery, finely chopped
9 oz. pkg. frozen peas, cooked and cooled
1 jar real bacon bits
2 cups shredded cheddar cheese
½ cup Miracle Whip or real Mayo
½ cup sour cream
2 Tbsp. sugar
½ pkg. Good Seasons Dry Italian Dressing
Put the lettuce in a layer on the bottom of a large bowl, next the onion, then the green pepper, then the celery, then the peas, then the bacon, and then the cheese. Mix the mayo, sour cream, sugar, and Italian dressing and put in a layer on top. You can cover and refrigerate overnight. Don’t mix the dressing into the salad until right before serving.
I'm sure you could substitute some bottled dressing (ranch or thick Italian) if that's available to you.
Corn Casserole - my aunt's recipe
17 oz. can regular corn, drained (or approx. 17 oz. of frozen corn works, too)
17 oz. cream style corn
1 stick margarine, melted
3 eggs, beaten
8 oz. sour cream
1 small box Jiffy corn muffin mix
Melt stick of margarine in 13 x 9 pan. Add other ingredients. Mix well. Bake at 350 for about 50 minutes.

Buffalo Chicken Dip... one of the greatest side dishes I've had, that has actually won me money and prizes at work potluck lunches. Prep time 5min, Cook time 40 min, Ready in 45 min, Serves 20.
Ingredients:
2 (10 ounce) cans chunk chicken, drained or packaged ckicken cut into chunks
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce, such as Franks® Red Hot®
1 1/2 cups shredded Cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers
*I usually skip the crackers and celery and just use tortilla chips.
Directions:
Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

Original Green Bean Casserole
(Makes 6 servings.)
Prep Time: 5 minutes Cook Time: 35 minutes
- 1 can (10 3/4 oz.) Campbell's® Cream of Mushroom Soup
- 3/4 cup milk
- 1/8 tsp. black pepper
- 2 pkgs. (9 oz. each) frozen cut green beans, thawed*
- 1 1/3 cups French's® Original French Fried Onions
1. Combine soup, milk and pepper in a 1 1/2 qt. baking dish; stir until blended. Stir in beans and 2/3 cup French's French Fried Onions.
2. Bake at 350ºF for 30 minutes or until hot. Stir. Sprinkle with remaining 2/3 cup French Fried Onions. Bake 5 minutes or until onions are golden.
*Or 2 cans (14 1/2 oz. each) cut green beans, drained
or some sort of pasta salad!

How about tabouleh? Soak some bulgur wheat groats, add chopped onions, tomato(you can even used good quality canned, drained chopped tomatoes), cucumber, a little mint, parsley, lemon juice and olive oil. It won't get poisonous in the heat if you are in a warm climate.
Or corn salad: Corn kernels (canned or frozen), diced green and red bell pepper or mild green chilis, diced onion(green, red or white), a can of drained and rinsed black beans, chopped cilantro(optional), fresh herbs of some sort (parsley, oregano, basil are good) and maybe sunflower seeds or cubes of mozzarella or Monterey Jack cheese. Dress with bottled golden Italian (not creamy, the oil-vinegar kind) salad dressing.

Four ingredients, but they may not be common...
Cheese tortellini or ravioli or even plain rigatoni.
Alfredo sauce
Cubed chicken pieces
Maple syrup
Cook the pasta.
Stir together Alfredo sauce and maple syrup to taste and heat in saucepan on stove top. (Sweet is good!)
Add maple Alfredo sauce to prepared pasta and chicken.
Bake, microwave, or reheat in pan on stove and turn into serving pottery.
Use LOTS of Alfredo sauce so that the pasta and chicken are completely surrounded by the sauce. So easy my kids do it. My family loves this and I get compliments at potluck dinners. Enjoy.

Ok I have a easy pasta salad recipee
Any garden spiral macaroni (hope I spelled it right)
Italian dressing (enough to evenly coat the macaroni)
chopped black olives (You judge how much by how much you like)
chopped green olives (again by how much you like)
salt and pepper
boil pasta till al'dente (firm but chewable)
drain and allow to cool to room temp
add the dressing, olives and salt & pepper
mix together and chill
i hope this helps ya hon and if you cannot find the garden pasta just a regular spiral pasta will do.

how about fixing a fruit-salad? with fresh fruits in season and adding some canned fruits as well. In addition, bring some whipped cream and/or some yogurt as topping, add some walnut-pcs to it - delicious!!!!
or how about a baking-try of pizza with different toppings? This can be served cold so you can even prepare it a day in advance!

TACO SALAD
in a bowl break up a head of lettuce or a bag of lettuce top with your favorite toppings black olives, onion, peppers, cucumbers, tomatoes , than add crumble 1 lb of taco meat on top, top with cheese, and crumbled tortilla chips and a bottle of ranch dressing on the side very good and easy

Cheesy broccoli rice.
Cook up some white rice, mix with some melted velvetta cheese and a package of frozen broccoli cuts that have been steamed.
Put it all in a slow cooker and your set!
