Pasta Puttanesca

1 can crushed Roma tomatoes, about 28 oz.
2 T. olive oil
1 clove garlic, minced
1 sm. onion, chopped
1/2 c. sliced black olives
1/4 c. artichoke hearts (canned, packed in water)
1/4 c. sun-dried tomatoes
1-2 T. capers
1/4 c. chopped fresh parsley
1/4 c. dry white wine
Salt and pepper to taste
1/2 lb. linguini
Parmesan, Romano or Asiago, grated (or cheese substitute, for Vegetarian recipe)

In a lg. frying pan or pot, heat oil. Sauté onions about 1-2 minutes, add garlic and sauté about 1 more minute. Add olives, artichokes, sun dried tomatoes, capers and parsley; sauté 1-2 more minutes. Add wine and canned tomatoes; stir to mix well. Season to taste with salt and pepper. Note: if the tomatoes seem to be too acid-tasting, add a small spoonful of sugar (but go easy on the sugar). Taste and adjust seasonings. Reduce heat to low and let simmer 5 minutes while the pasta cooks. Drain pasta well, toss with sauce and serve immediately with cheese, a tossed salad and some good Italian bread.

Get your self 2 boxes of cheep generic macaroni & cheese, 25 cents a box. Make 1 box following the directions, then add 2/3rds of the other packet of cheese from the other box to it! If you just do one box (as is), it doesn't taste cheesey enough, so that's why I add some of the other cheese packet to it! Now that's delicious! And very cheep! I will usually have a big pile of that on my plate with a grilled hambuger patty on the side! Very cheep, very filling and very good!

If we are broke I always fix this and my kids love it -
2 boxes of mac and cheese- prepare it
add 2 cans of peas - drain water
add 2 cans of tuna - drain water
add some butter
mix together and you have a big thing of tuna casserole.
sometimes you can even have left overs for lunch.

Or a big can of baked beans - add some syrup and ketchup and some brown sugar - makes it sweet and very tasty. Add a little and go by taste to see how much.
cut up a package of hotdogs
Mix hotdogs in beans - heat and serve. You know have beanie-wienies.

Pasta of any kind is inexpensive, add any sauce that you like. Make a side salad, add a nice loaf of Italian bread. For dessert fresh fruit, what ever fruit that's in season. This meal is inexpensive and delicious.
