oftentimes, a notary public will notarize documents that are signed by parents if the parents and your girlfriend are together. as you guys arent married, you cant legally sign paperwork for her and dont legally have any power of attorney for her. right now, her parents have that power, as well as the 21 year old child.

personally, i would have her wait until she can sign paperwork herself. even if she can sign a bad replica of her name, she should be encouraged to sign in the presence of a notary public (which are available at all hospitals).

how bad is the stroke? Can those documents wait? Maybe get a doctor to sign a certificate of health for her stating that she is unable to sign papers for now and that a child or the 21 year old should sign in behalf of the mother.

We had a similar problem at home with my brother. We invited the Bankers to visit him in the hospital as he had undergone brain surgery and also got a certificate from his doctor regarding his condition and inability to sign. In your case perhaps you need a lawyer to draw out a power of attorney that she may consent before a judiciary and they may accept her left thumb impression instead of a signature.
