what sort of marinade and things to put on it? and best way to cook it

Ok lets start with the stick or skewers.
If you use metal ones that is great but the flavor won't be the same and the meat (if you use any will cook faster)
If you use wood ones then make sure you soak them in water for a while (1 hour or so) before you plan on using them. This is to make sure they don't burn up and break and such.

I would save to use only fresh vegetables and go crazy with what you like. I sometimes just make vegetables one for friends that are vegetarians and such.
You can use shrimp steak chicken pork sausage and a combo of all.

I like to make sure that there is the same kind of meat per skewer just to ensure cooking time is the same for each. I mean why have a shrimp on a steak one when the shrimp will cook before the steak.
Go all out and try marinating you meats before you use them. You can also marinate portabella mushrooms and they can taste like a steak for you vegetarian friends.

Seekh Kebab

Made with lamb or beef mince and traditionally cooked in a tandoor (clay) oven.

Ingredients:
450 gm (1lb): Lamb mince
Following should be all chopped together:
2 no: Onions (medium size)
5 no: Garlic cloves
1.5cm: (0.5 inch) of ginger
1 no: Green chilly (de-seeded)
2-4 sprigs: Fresh coriander

Dry Masala(Spices):
2 no: Cardamoms (small, green, ground)
1 no: Cardamom (Black, ground large)
A pinch to 1/2 a tbs: Chilly powder
1/2 a tbs: Salt
1/2 a tbs: Garam masala
1/2 a tbs: Cumin seeds (whole)
1 tbs: Dry coriander Powder

Method:
Put all the mince lamb in a large bowl and add chopped onions, garlic, ginger, chillies and coriander. Then add whole of the ground masala and mix thoroughly with either your hand or a wooden spoon.
Take a large hand-full and make into a long kebab using the handle of a wooden spoon.
Put foil on to your grill and put your kebabs under a hot grill. Cook on all sides until brown.
Serve on a bed of lettuce. Garnish with freshly sliced tomatoes, onion rings, chillies, lime wedges & coriander-mint chutney(an indian dip).

First get yourself the proper sticks (metal are better than wooden). We cut up green pepper, tomatoes, onions (red are best!)and mushrooms into bite sized pieces. You can marinade your meat first if you like, then put meat & veggies on the stick alternately and lay the sticks on the BBQ. You can do all sorts of veggies. Use your imagination. Yum!

for beef ones, marinade them overnight in A1 steak sauce...if you're using bamboo skewers soak them in water for a couple hours first so they don't catch on fire. With the beef, put squares of green, red, and yellow bell peppers, red onion, and cherry tomatoes. Brush them with olive oil so they don't stick to the grill.

Easiest recipe with flavor that will please most crowds:

Cut up chicken, colorful pepers, red onions, (mushrooms and tomatoes optional) into bite sized chunks, thread onto skewers and marinate in italian dressing 2hour to overnight. Pepper them, and toss them on the grill or under broiler until chicken is no longer pink in the middle. yum. Serve on a bed of your favorite rice (I am fond of market vegetable from zatarains).

shish kebabs

is a turkish dish of skewered meat normally lamb / chicken

cut meat into 1 / 2 cm cubes
onion same as meat

marinate over night in olive oil. thyme . garlic

next day place meat onto metal skewers / or wooden ones you have soaked in water to stop them burning

bbq over hot coals or grill

enjoy

it's all about the marinade. use a spicy marinade. lemon pepper for instance. Add any veggies you want.
