Hamburger Casserole with Potatoes

INGREDIENTS:
1/4 cup fine dry bread crumbs
1/2 cup milk
1 pound ground round
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons minced onion (1/2 small onion)
1 large egg
prepared mashed potatoes, about 2 to 4 cups
3/4 cup shredded sharp Cheddar cheese
paprika, optional
PREPARATION:
Soak bread crumbs in milk. Mix ground beef, salt, pepper, onion, bread crumb-milk mixture, and egg. Spread in a 9-inch pie plate. Bake at 350° for 35 minutes. Top with mashed potatoes; sprinkle with cheese.
Return to oven for 10 minutes longer, or until cheese is melted and potatoes are thoroughly heated. If desired, sprinkle hamburger casserole with paprika.
Hamburger casserole serves 4.

Hamburger Rice Casserole Recipe

Ingredients
- 3 cups white rice
- 1 pound ground beef
- 1 onion, chopped
- 1 cup chopped celery
- 2 tablespoons soy sauce
- 10 3/4 ounces condensed cream of chicken soup
- 10 3/4 ounces condensed cream of mushroom soup
- 1 tablespoon molasses
Chow mein noodles for garnish

Directions

Preheat oven to 350ºF. Butter 2 quart casserole dish.
Cook rice according to directions on package.
In a heavy skillet, brown ground beef with onions and celery, and then in a prepared casserole dish, mix together cooked rice, browned ground beef mixture, canned soups, soy sauce and molasses.
Cover the dish and bake 30 minutes. Uncover and add chow mein noodles. Bake an additional 10 minutes.
Container: 2 quart baking dish
Servings: 6
Prep Time: 15 minutes
Cook Time: 45 minutes

My Dad does a good one with thin sliced potatoes, crumbled hamburger cooked up in a pan to make some gravy with it, a few spices, and all mixed together in a casserole dish and cooked in the oven for like 45 minutes. He doesn't write down recipes,, though, just cooks by memory.

You could also try Inside-Out stuffed meatloaf. Mix up some hamburger with some meatloaf fixings ( a mix if you can't find a recipe ) and then line the casserole with stuffing ( again, you can use stove-top mix if you don't have a recipe ) put the meatloaf inside, and then cover it with more stuffing mix. Bake the whole thing till the meatloaf is done; the stuffing on top will get a bit crisp, but that's OK.

And last, but not least.. the most delicious ever.. Sheperd's Pie:

Ingredients:

1 lb. ground chuck (or regular ground beef, ground turkey or whatever's on sale)
1/4 medium onion, chopped
2 carrots, peeled and sliced diagonally
1 c. sliced mushrooms
6 medium potatoes, boiled and mashed (add milk, salt and butter as usual)
1 pkg. brown gravy mix
3/4 c. shredded sharp cheddar cheese

Directions:

Brown ground chuck with chopped onions and drain, then set skillet aside while finishing the next steps. In three separate pots cook carrots, sauté mushrooms in a dab of butter and prepare mashed potatoes if not already done.

Prepare gravy per package directions and add to ground beef, along with carrots and mushrooms. Cover and simmer on medium heat for a few minutes until thickened. Place beef mixture into a medium sized casserole dish and cover with mashed potatoes.

Drag a fork over the top of potatoes and sprinkle with the amount of cheese desired. The more the better (just be sure to buy it on sale!) Place in 350-degree oven just long enough to melt the cheese. YUM!!


There are many variations of this pie (I just use the potatoes, corn, hamburger, and crust), but it's simple and so good! Kudos on surprising the wife. Good luck.

This is a simple no fail (hopefully) recipe.

1 Pkg Tater Tots
1 lb Ground Beef
1 Can Cream of Mushroom, Golden Mushroom or Cream of Celery

Brown Hamburgers and combine and other ingredients in baking dish spayed with Pam. Bake at 350 degrees until Tater Tots are done and golden brown on top.

Variations:
Shredded Cheese on Top
Chopped Onions cooked with hamburger

Mexican Casserole

2 lbs hamburger meat
1/2 onion, chopped
1 (1 1/4 ounce) package taco seasoning mix
1 (4 ounce) can chopped green chilies
1 (10 ounce) can enchilada sauce
1 (10 1/2 ounce) can cream of mushroom soup
1 (8 count) package flour tortillas
3 cups shredded cheddar cheese
1 (8 ounce) bottle taco sauce

Brown hamburger meat with onion and taco seasoning.
Mix mushroom soup and enchilada sauce together in a bowl.
Cut tortillas into triangles.
In a 9x12 pan put a layer of tortillias.
Then a layer of Hamburger mixure.
Then a layer of Soup mixure.
Then a layer of chilles.
Then a layer of cheese.
Then repeat again.
The last layer should be tortillias.
Then spread taco sauce on.
Then top with cheese.
Bake in a 375 degree oven uncovered til bubbly.

Does she like mexican food? This is super easy and not to many ingredients! Use a 9x13 baking dish and crumble enough tortilla chips to make a thin layer on the bottom. Brown hamburger meat in skillet, then add taco seasoning following package directions. If your skillet is large enough add a can of refried beans and mix together. (you may need to use a pot) Prepare a package of spanish rice in the microwave and add to the mixture. (it will be with all the package rice, like Liptons.) Then pour the mixture onto the chips and smooth out. Then pour a jar of Tostios cheese dip on top and smooth out. Warm it up in the oven a little to warm the cheese and you are ready to go. Tastes great!

Pasta Casserole

1 package (1 lb) wide egg noodles
ground beef/hamburger
garlic
onion
2 jars regular size pasta sauce (like Ragu's, any flavor you like)
1 package shredded extra sharp cheddar cheese
small can sliced black olives
can of corn
olice oil
salt & pepper
chili powder
cayenne pepper (if you like spice/heat)

1. cook noodles as directed on package, set aside
2. cook ground beef in a sauce pot, with olive oil, garlic, onion
3. add the 2 jars pasta sauce
4. add olives and corn
5. add the seasonings to your taste, but overseason just alittle bit because noodles will absorb the flavors
6. stir in the noodles
7. stir in the cheese
8. put mixture in a baking or roasting pan probably a 9x13
9. cover with foil and bake in a 350 degree oven for 30 minutes, after 20 minutes take off the foil and continue baking.
10. enjoy and good luck with the mrs.
11. oh, you can serve with garlic bread, YUM!!!!!!!!

S*** on the shingles. shepherds pie. go buy a Joy of Cooking!Or make some spaghetti. Fry up the hamburger......although I dont eat red meat....mad cow disease ya know. Add chopped onions & garlic.....tomato sauce...tomato paste...chopped tomatoes....season to taste with basil, tarragon, oregano, rosemary,,,more garlic. Let it cook on medium for a while...maybe add some ground or round sausage. Garlic bread, nice ceasar salad.(you can get that in a bag) . Good luck! Oh yeah and Red wine. And something she will like for dessert......maybe chocolate dipped strawberries and champagne. Have Fun!

Enchilada Casserole
1 lb. hamburger
1 small white onion
1 small bell pepper
1 can diced green chilie
1/2 can diced jalepenos
18 Corn Tortillas
1 can Cream of Chicken (or Cream of Mushroom) Soup
2 Tbls. Garlic Salt
Canola/Vegetable Oil
1 Can Condensed Milk
1 package of 18 slices of cheese
or shredded cheese



Pour condensed milk in pan and put on low heat. Break up the 18 slices of cheese and stir into milk. Stir constantly until cheese melts. You can turn the heat higher if you are going to watch it carefully. When cheese is melted, remove from heat and set aside.

Brown hamburger and drain oil. Add 2 Tablespoons Garlic Salt, finely chopped bell pepper and onion. Continue to cook until onion is transparent. Add chili and jalepenos and stir until mixed. Pour entire hamburger mixture into pan with melted cheese and milk. Stir.

In small skillet, heat some oil. When oil is hot, carefully put one tortilla into oil, let it bubble for 1/2 second and remove to paper towels. Continue this process with all 18 tortillas.

In a 9x13 pan, spoon a small quantity of cheese/meat mixture in bottom of pan and spread around. Put in a layer of 6 tortillas, overlapping edges. Then, spoon in some of the cheese/meat mixture and spread to cover tortillas. Repeat with another layer of tortillas then cheese/meat mixture. Then, layer the last 6 tortillas on top of the last layer. Add one can of Cream of Chicken OR Cream of Mushroom soup to the remaining cheese/meat mixture and stir. Use this mixture to put on top of tortillas for your last layer.

Cover with aluminum foil and bake in oven for about 20-30 minutes-until casserole is bubbling hot. Remove and serve squares of the casserole with salad and warm bread.
