An easy recipe and good too is tatertot casserole.
fry your meat, put it in a baking dish, cover with cream soup and you can add broccoli or peas, or any veggie really. add some milk to moisten, mix together, pour tator tots over the top. Bake at 400 until tots are brown, cover with cheese, put back in oven until it is melted. It is super easy and good.
you can also make spaghetti, lasagna, tacos, burritos, all of these are easy.
for taco's or burritos just fry the meat and saute some onion and bell pepper if you want, and then open a can of refried beans, and have tortillas, cheese, sour cream, anything that goes on top. simple.

1 pkg. taco seasoning
1 can whole kernel corn, drained
1 can tomato sauce
1/2 cup water
1/2 cup chopped bell pepper, any color
1 onion finely chopped
1 or 2 cloves garlic minced
3 tbs. olive oil
1 cornbread recipe
1 cup shredded mild cheddar cheese

--------------------------------------------------------------------------------

In another frying pan, saute the onion in the olive oil for 20 minutes or until onion is a nice golden brown. Add the minced garlic and saute for 3 minutes more.

Add onion, garlic mixture to the meat and simmer.

Now prepare the cornbread recipe. When you are done mixing the cornbread batter place the meat mixture in a 9 x 13 baking dish and pour the cornbread batter over the top of the meat and spread it out evenly.

Preheat your oven to 400 degrees F. and bake uncovered for 20 minutes. Remove from the oven and sprinkle the cheese over the top of the cornbread and bake an additional 4 or 5 minutes or until the cheese melts.

Serve this Mexican casserole with a nice green salad and some salsa and you've got a complete, delicious, and easy meal.

Recipe For Cornbread

--------------------------------------------------------------------------------

--------------------------------------------------------------------------------

Ingredients:
3/4 cup yellow corn meal
1 1/4 cup white flour
3 tsp. Rumford baking powder (read the benefits of Rumford baking powder and why I use it.)
1 tsp. sea salt
1/4 cup sugar
1/4 cup melted butter
3/4 cup skim milk
1 egg beaten
1 cup cream style corn, liquified in a blender

--------------------------------------------------------------------------------

--------------------------------------------------------------------------------

Directions:

In a large bowl combine the corn meal, flour, baking powder, salt, and sugar. Mix the dry ingredients well with a spoon.

Beat the egg in a bowl and add the liquified corn, milk, and melted butter.

Pour the egg mixture into the flour mixture and mix till the flour is just moistened. Do not over mix. Pour into a greased 8 inch square glass dish and spread evenly. You can use Pam to grease the pan. It works great.

Bake at *375 for 25 -30 minutes.

Try this cornbread right out of the oven with some warm butter. The texture is nice and moist and not too heavy. I added the cream syle corn to add a little more corn flavor. I'm betting your family will love it.

Meatballs are handy - season the meat to taste and add an egg or two to hold it all together, plus some chopped onion to keep it moist. Best way to cook them is to put them on a cookie sheet and do them in the oven - you don't have to watch them as closely as you do in the frying pan. Then you can serve them over spaghetti, with tomato sauce, or over noodles with a stroganoff sauce - This is usually made with steak but is good with meatballs too...

Fry one chopped onion, 1 lb sliced mushrooms in butter. Add about 3 tbsp of flour, stir till flour is well mixed in, and add about two cups of beef broth (canned). Add meatballs to heat through. Then take it OFF the heat and stir in a cup of sour cream and salt to taste.

Other ideas that you can google: Stuffed Peppers, Tamale Pie, Yorkshire Beef, Salisbury Steak.

Yes as a matter of fact.If you take your ground meat and add some finely chopped(minced to some) hot peppers and onions and a little Spanish smoked paprika to it and mix it up good then cook slowly as to not burn the peppers or onions. Salt and pepper to taste.

I like to throw some crumbled bleu cheese into the mix and grill some burgers. Chili is always good, too, and super easy.
