Easy home made recipes: cut some Roma tomatoes in half, put them exposed side down on a cookie sheet, throw in some UNPEELED cloves of garlic, some basil and oregano, and bake in the oven until the tomatoes have browned. Remove the sheet from the oven, pull the skins off the tomaotes (they should pull right off), and the garlic, and throw everything in a food processor. Voila! Tomatoe sauce, without meat.
If you love your own recipe, but want a meatless alternative, try substituting broken up Boca burgers (already thawed) into your recipe in the place of the meat in your recipe. (FYI: Boca burgers are a vegetarian bean or soy meat alternative.) I've found that the American Flame Grilled kind have the most meaty taste.

Simply use Bell peppers - like the Red and Yellow Bell Peppers (or capsicum) with tomatoes as a base for your sauce
Alternatively you can do a cream based sauce with just cheese and garlic if you like that.
For Red peppers, you can add Chilli if you like a little zing your tomato base. First grill the peppers on high grill or burn them with your gas stove which ever you like. The skin will get burnt and pop all these into a plastic bag and tie it up. 10mins later peel off the burnt skin under running water. Chop it up and then cook up a normal tomato base sauce with red peppers and chilli. Mix that with some Basil, Oregano (fresh ones will be excellent).
Alternatively do a garlic and cream based cheese sauce.
both are purely vegetarian styled sauces.
I also like to do a mushroom cream sauce, an easy way is to use Campbells Cream of Mushroom, mix in 2 tbsp of fresh cream, some chopped button mushrooms (fresh) and cook them all together then add Spiralli (which is best for this dish) or Linguinie.
Put it in a small casarrole dish. Top it off with some Mozerella Cheese, and grill on High Heat for 5 mins for the cheese to melt and start to brown.

Pasta Puttanesca
1 can crushed Roma tomatoes, about 28 oz.
2 T. olive oil
1 clove garlic, minced
1 sm. onion, chopped
1/2 c. sliced black olives
1/4 c. artichoke hearts (canned, packed in water)
1/4 c. sun-dried tomatoes
1-2 T. capers
1/4 c. chopped fresh parsley
1/4 c. dry white wine
Salt and pepper to taste
1/2 lb. linguini
Parmesan, Romano or Asiago, grated (or cheese substitute, for Vegetarian recipe)
In a lg. frying pan or pot, heat oil. Sauté onions about 1-2 minutes, add garlic and sauté about 1 more minute. Add olives, artichokes, sun dried tomatoes, capers and parsley; sauté 1-2 more minutes. Add wine and canned tomatoes; stir to mix well. Season to taste with salt and pepper. Note: if the tomatoes seem to be too acid-tasting, add a small spoonful of sugar (but go easy on the sugar). Taste and adjust seasonings. Reduce heat to low and let simmer 5 minutes while the pasta cooks. Drain pasta well, toss with sauce and serve immediately with cheese, a tossed salad and some good Italian bread.

take clean tomatoes and on the bottom of the tomato with a paring knife make an X. placed the tomatoes in boiling water for a jiffy. Take them out of the boiling water and drop right into a bowl of ice water to relax. At this aspect the floor will come off very genuinely. Peel the tomatoes and also you are able to both weigh down them with a masher, your palms, or a food processor. In a pot saute clean minced garlic, chopped onion, a million piece of celery finely chopped, a million carrot finely chopped. once this has softened upload your tomatoes and simmer until eventually the flavors blend properly. upload clean chopped basil at the same time as the sauce is very nearly waiting. Season with salt and pepper on your style.

Well, there are several ways to do it. You could heat up tomato paste or sauce or a prepared spaghetti sauce straight out of the can or jar if you wanted to. You could chop some vegetables like zucchini and bell pepper to add (my favorite).
Or you could add one of those meat subsitutes made out of soy and stuff that looks like hamburger crumbles. Morningstar Farms and Boca Burger have some, but you'll probably be able to find several brands at a large supermarket or health food store.

"This is my Sicilian great-grandmother's recipe. I've never tasted better. Serve with meatballs and Italian sausage; it's also terrific as a marinara sauce."

INGREDIENTS:
1 (28 ounce) can crushed tomatoes
2 (8 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
3 cloves garlic, minced
1 tablespoon white sugar
2 tablespoons red wine vinegar
2 teaspoons dried oregano
1 pinch crushed red pepper flakes

DIRECTIONS:
In a large skillet combine the crushed tomatoes, tomato paste, tomato sauce, garlic, sugar, vinegar, oregano and red pepper flakes. Stir all together and simmer over low heat for at least 30 minutes (for the best flavor). Stir frequently to prevent burning.

SAUTE CELERY,onion,peppers mushrooms,squash,zuchiniin skillet or wok w/cooking oil,add garlic when veggies are almost done,add crush tomatoes,and simmer 5 min.

You buy some sauce without meat and then don't put any in it.
Classico and Bertolli have some excellent ones. I usually add a touch of garlic salt, some fresh basil if I have it around, and a dash of red wine. : )

Buy spaghetti sauce in a jar and cook it without adding meat. I reccomend Bertolli.

Sugo al Arrabiata
INGREDIENTS:
1 teaspoon olive oil
1 cup chopped onion
4 cloves garlic, minced
3/8 cup red wine
1 tablespoon white sugar
1 tablespoon chopped fresh basil
1 teaspoon crushed red pepper flakes
2 tablespoons tomato paste
1 tablespoon lemon juice
1/2 teaspoon Italian seasoning
1/4 teaspoon ground black pepper
2 (14.5 ounce) cans peeled and diced tomatoes
2 tablespoons chopped fresh parsley

DIRECTIONS:
Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
Stir in wine, sugar, basil, red pepper, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil. Reduce heat to medium, and simmer uncovered about 15 minutes.
Stir in parsley. Ladle over the hot cooked pasta of your choice.
