I am taking pictures of the stars

EV means Exposure Value. In digicams, EV gives you a way to adjust exposure to your preference.

Positive "+" values increase exposure (brightness).

Negative "-" values decrease exposure.

Zero is the exposure the camera is programmed to set. So the + and - values let you go brighter or darker than the base programming.

EV won't help much in taking star pictures, because it is just for a little tweaking.

Use a Nighttime Scene setting if you have one. Or any settings that will keep the shutter wide open for a few seconds. You should get a tripod, or other device to hold the camera stationary.

Don't expect too much. The stars don't give off much light and are had to capture in a camera.

In digital photography, EV would refer to the Exposure Value.

In electricity, EV would be an electron Volt.

From Wikipedia:

In photography, exposure value (EV) is a value given to all combinations of camera shutter speed and aperture that gives the same exposure. By definition, EV 0 corresponds to a shutter speed of 1 s and an aperture of f/1.0. It is a base 2 negative logarithmic scale, where an increase of one EV corresponds to half the amount of light admitted.
